...knowing what you know now...What would you do differently?
After playing for a while, I found out what classes I enjoy the most. Instead of starting as a warrior I would have been a mage or a shaman.
I would've realized that gear doesn't really matter before level 70, and not stressed about VC drops.
I'd never, ever go questing in Desolace.

I was supposed to roll Horde too, but I rolled Alliance since a guy I know said he was going to play that. He ended up starting on a different server anyway.
About drops, I think I would've stressed it as much as I did anyway, because I played during the time there were no level 60s. Items were actually relatively important all the way, and even though the stats on most items were bad, it was all we had to get through instances. Couldn't call in some level 60 mage to AoE Gnomeregan for us. It was also harder to get gold back then. Skinning and mining didn't give nearly as much as today, and I earned most my gold by doing instances and selling green and blue drops to vendors or on AH.
I would not have leveled straight to the cap as Carimm mentioned. It was quite fun, and there were quite a bit of world PvP back in those days. With any alt I make today, I try to level relatively quick anyway.
I would've still rolled a Rogue or a Warrior, since melee classes is what I enjoy the most. We get the most action from any situation.

Hmm... i wouldn't roll a paladin. We get buffed followed by nerf after nerf, then buffed again.
(referring to TBC when it first came out, was excited for Crusader Strike. It was nerfed before TBC even came out. Now WoTLK looks promising, but i know Tom Chilton will find another way to screw pallies over.)
I would most likely roll a mage, since that is my favorite class to play at the moment.

Probably shouldn't have given up on that priest I rolled at first.

Dang...
Yeah, for supposedly being "desolate," Desolace is packed to the gills with mobs. You can't fight one without at least one or two more wandering over. Same thing with Badlands, and Western Plaguelands, and any zone that's visually boring and supposed to be a barren wasteland.
Back on topic, I would have not picked my server based on whether someone I knew was on it. I rolled Alliance on Norgannon, which turned out to be a mistake when my friend deleted his character and left me alone on a deserted server.
