There's an addon that you can run and it takes a census /who of any one who is online. If enough people from both factions do this, you can get a pretty accurate figure of the horde:alliance ratio.

Usually on PvE realms, Alliance are the majority. On PvP realms, there is more Horde. I would link to a site that has player contributed census reports but I think that may be against the rules. There is an AddOn from said site that takes census reports but only reports the ones logged on at the time and on your faction side.
Most realms average a 1.2/1 average. I say average with extremes ruled out.
The only true accurate census reports are in Blizz's hands though.

The realm (PvP) on which I currently spend the most time is 1.4 to 1 horde to alliance. However the alliance play more and in terms of players on line (over a 24 hour period), the average ratio of people playing is 1.1 alliance to 1.0 horde. This data is gather from the add on mention or one like it.
