since you're leveling, don't go for 1h anything really. your melee weapons are supposed to be nothing but stat bonuses, and two 1-handers tend to give you less stats than one 2-hander. also, less chance to miss when you're forced to wing clip and run.
the main reason these lvl 70's sport two 1-handed weapons is usually so that they can get double
+20agi or
+30int.
with 2 of those on their one-handers. the stats would outweigh most 2-handed weapons, usually by giving more crit, or a steady mana-regeneration rate. (

Those who sport 2-handers get either
Savagery or
35agi.
Seeing as how you're most likely not level 64+ yet, you need not worry about enchants. unless you intend on twinking.
Also, dont misunderstand this post, im just trying to explain why most 70 hunters do what they do. for leveling, it really doesnt make too much of a difference. just do what you like, and how u like doing it ;)
however, read up on hunter mechanics. and Get as little strength as possible, preferably no strength at all, however, This
Helm,
Shoulder, and
polearm are exceptions, in that they make up for the strength with ample amounts of other stats you need.

The reason most of the hunters are using two-handers, is becouse of the damage they make with Raptor Strike (PvP) and stats. (PvE)
And becuase
this is very nice, and its easier to get than a dual weild equivilent.
if you're talking about raiding, generally DW is better, until
this drops. its one of the only "hunter weapons" all the other good weapons with great stats also have great damage on them, so rogues, warriors, and shammans are going to take them (usually). plus, its not much of a difference in DPS (its higher i beleive) than the best dual weilds you can get in hyjal or BT.
but the best weapon you can get is the
Shivering Felspine at about 100 raw DPS, where as the best dual weilding weapons (
Fang of Kalecgosx2) only gets you about 82 raw DPS
