Watch for the Fel Reavers.
QFT. If the ground starts shaking and/or you hear a weird sort of... metallic groaning, run like hell.
That aside, you don't
have
to spec holy to heal most intances until you get close to 70. It may be easier, but it's not strictly necessary. It depends on your gear and your experience with healing, but it's doable even as shadow spec. If you wanted to spec holy now though, I'd probably go with
this
now, working up to
this
as you level.

If you're set on speccing holy for endgame, there's no harm in getting a holyish spec now. You want to be fairly certain that you're going to do a lot of instance running though, otherwise shadow is definately the faster way to get to 70.
Contrary to popular belief however, holy and disc does have some killing power. You may have hear talks of the infamous "Lolsmite" build. It is quite the efficient killer, as well as a very good healing spec.
I would start here:

Try it out. You may love it, you may hate it, but at least you've tried it =)

Firstly, whatever you spec, be it shadow or holy, for your level it is advisable to get Imp Divine Spirit as a nice boost to spell dmg/healing and regen.
This will make healing instances as shadow easier and dpsing as holy easier too.
Secondly, watch out for that damn Fel Reaver. There is nothing worse than pulling a mob and then getting the ground shake and having to kite like hell to avoid being 1shot by a lvl 70 elite giant robot!
Thirdly you will need to get lots of thrallmar/honour hold rep.
If you are going to be an endgame healer you need revered for the head enchant that is purchasable from the relevant hellfire faction quartermaster.
The best way to do this is to do as many quests and instance runs in Hellfire Citadel as possible. It should be noted that the quests done for Falcon Watch/that dranei place (sorry only ever got to outlands as horde :S) do NOT give you thrallmar/honour hold rep unless they are part of a quest chain started in Thrallmar/HH.
You can world PVP for rep, but as a (comparatively) low lvl priest expect to be surprised by lots of annoying lvl 70s who nuke you far too quickly.
If you are horde it is vital that you do the mag'har quests in Hellfire. Not only will this get you up in mag'har rep early (not necessary unless you have some special desire for certain profession recipies or the exhaulted mount) but there is an amazingly good choice of
quest
reward
from the relatively easy
quest chain
.
The Hellfire Citadel instances also contain a lot of good caster gear (healer and dps) in the form of drops and quest rewards. I recommend spending time in both Ramparts and Blood Furnace until around level 62. Then you should be able to start healing Coilfang instances. Honoured rep with the Cenarion Expedition gets you a very nice
healer mace
, and doing the Underbog quests for Sporregar gets you a great
trinket
and a nice little
food
generating item
that is well worth hanging on to.
That information should keep you going for a while at least.
Hope it helps a little.
With regards to spec, choose whatever you enjoy the most. As many people have already stated a shadow priest should be able to heal most instances up until around level 68 (providing the tank/dps are good enough).
Hellfire Peninsular is generally quite slow to quest through for priests, regardless of spec. Once you get into Zangarmarsh though things tend to pick up speed.
Whatever you chose to do, remember to have fun!

If you're shadowspecced, there's no such thing as Imp Divine Spirit. IDS is 23 points into Disc, Shadowspecc is defined by two things,
Shadowform
and
Vampiric Touch
, meaning at least 41 points in Shadow. 41 + 23 = 64. Not gonna happen til WotLK sadly. VT is worth more in Shadowform than IDS. For holy though, yes it's a good skill. For Lolsmite, it's a necessity.
Secondly, watch out for that damn Fel Reaver. There is nothing worse than pulling a mob and then getting the ground shake and having to kite like hell to avoid being 1shot by a lvl 70 elite giant robot!
I don't think that can be said enough times. For their size they're amazingly sneaky.

Good tip in that is to run Ramparts and Blood Furnace till you reach Honored rep. That will make Revered a breeze with quests and a couple of Shattered Halls runs or Heroic runs at 70.

Instead of that healing mace, buy 360
Unidentified Plant Parts
and turn in at the Cenarion Expedition outpost in Zangarmarsh (I believe it's 360 to reach Honored) and buy the
Preserver's Cudgel
. Not usable till lvl 62 though.

Those two items are just not to be missed. Make sure you do those quests. The trinket is very nice for solo grinding and I can't tell you how much money that spore has saved me.
That information should keep you going for a while at least.

That's just good advice. =)
Good luck.

Wow!
I got my own review! Cheers bwirum!
With regards to my Imp DS comment. Yes, you are right bwirum, sadly there is no such thing as an IDS shadow spec.
The only reason I suggested making an IDS/shadow hybrid spec (if we are going to call it that instead) is that it would help a shadow specced priest instance heal without too much difficulty. In all fairness if the tank is good enough then it shouldn't be necessary.
If not using IDS then still speccing in Disc up to Mental Agility would help with mana efficiency but, from what I remember, shadow priests fill the shadow tree first whereas holy/disc fill disc (to IDS) then holy.

It might take a little getting used to if you're accustomed to being shadow spec. Things will go a bit slower, and you'll go through mana faster. It's not impossible to do though, you just need a little patience.
