I don't have a copy of a legit email, but if it says any of the following, it's fake:
If it says "Account Administration" at the bottom of the email, it's fake becaue AA doesn't handle beta invitations.
If it has an end date for the Beta testing (i.e. "The beta will run until December 31, 2008), it's fake because right now they don't know when the Beta testing will end.
The email should come from "WoWExpansionBeta@Blizzard.com." Anything else is fake. Keep in mind emails can still be spoofed.
Also, don't click on any of the links in email as they can easily be spoofed too. Manually type out the link and enter the Beta code there (assuming it's an actual World of Warcraft website). If the Beta key is invalid, it's likely fake.
If you're still not sure, forward it to Billing@Blizzard.com.

Blizzard will never ask for your password
blizzard doesnt want your information
if you didnt opt-in, you shouldnt get an email
follow
these
guidelines to find out if it is fake
i read a post about fake opt-in emails, but for the life of me i cant find it for you

it's always an option to physically go to the beta activation site (do
NOT
click the link in the email), and then enter the code they gave you and see if it works.
Either you get told the code is invalid, or it works and you're in.

not true opting in just increases the chance to be selected.
you wont be chosen if you dont want to be chosen (ie you didnt opt-in) blizzard doesnt give out beta keys if they feel they wont be used, or be used enjoyably.
Its also fake becuase they want to know your password. when you opt-in, you enter you login in the first lace, so they know if you're in good standing or not. plus, the grammar isnt very good (one of the things they say to check) bad grammar/punctuation is a key indicator.
