A typical question, but now it's my time to start asking for other people's opinions
The rules on how you should think of the professions for your death knight:
1) You wanna be a TANK! - weee....
2) ...but wanna have the opportunity within the profession(s) to switch to DPS gear/specc and so forth
So as a DK tank mainly, I have considered the professions of being a Blacksmith and an Inscriber and Engineer. I hereby presume I have another character or two to do the mining/herb/skinning job.
Which of those above mentioned professions do you think would be most beneficial as a tanking death knight?
BS + Engi? - imagine new Engi goggles...on a DK? kinda blow kill on the looks, but if the charc gets better I guess I could live with it...
BS + inscrib - Like JC only gems, but you can get another glyph to add...this is prolly my favourite combo, and im just collecting random herbs atm...
What would be your combos and why?

Most tanking gear made by blacksmithing can be bought assuming you get the mats. The few peices that are BoP when created are rarely worth the effort of leveling the entire profession.
Likewise with engineering - you can find alternatives as drops or rewards, or boe crafted items - the goggles are not enough of a benefit to level all of engineering solely for them.
I'm not sure about inscription yet - we dont know what the inscription "special" is (what the crafter gets that others cannot have), and we dont know much about the death knight glyphs or other inscription abilities yet. Right now you cant even get past 125~ inscription skill in the beta.
Really, there's no profession that drastically improves your ability to tank, dps, heal, etc. All the crafted items are replaced by drops eventually, and most can be bought without leveling the profession yourself. I would say go with whatever profession you like the most - for the other things it gives.
Engineering gives you a flying mount and motorcycle, among other cool toys.
Blacksmithing can give you some really nice BoP weapons (assuming blizz keeps the trend)
Inscription can make some cool glyphs I assume, but we dont know for certain yet.

I intend to roll a DK as my main, and have no intention on tanking...anything.
And I will most likely do BS + Eng

it was sarcasm.
The point was that people who roll tanking-capable classes with the intent to never tank in any situation whatsoever, just because they want to DPS, are idiots. They're selfish minded people with no intent to make themselves a useful entity in a raiding environment, or even before raiding.
It's the same deal with all those warriors or ret pallies or even feral druids who are leveling up - they get into an instance group, and are fully capable of tanking that instance - but most of them dont have any gear for it, not even a shield, and use the excuse "lol im dps" to try and get out of tanking. The group then ends up sitting around for an hour or breaking up because they couldnt find anyone to tank.
All specs of death knight can tank, there's no reason you shouldnt have a few peices of proper gear set aside for tanking 5 mans while leveling -at the least-. Failure to do so will generally earn you a bad rep real quick on the server you're playing on.
If the only thing you want to do, ever, no exceptions, is DPS - then roll a pure DPS class.

The reason you take tailoring isn't for gear :P it's to be able to, in short, disenchant all that netherweave, and possibly for netherweave nets. Taking enchanting without tailoring and vice-versa isn't really worth it imo.
That aside, I'm probably going herbalism & inscription

Enchanting/Inscription ftw, both of which are required and unbeatable for raiding, as the only way to enchant your rings is to be a chanter, that wont ever be outdone whereas anything you make with other professions will eventually be outdone.
As to the whole argument up north about the tanking etc, if you roll a class capable of tanking and you don't wanna tank, then dont. The only thing worse than not finding a tank, is finding one who knows NOTHING about tanking. If you roll a class capable of healing and choose not to heal, good. The only thing worse than a know nothing tank is a healer who knows less! Play the role you wanna play, roll the characters you wanna roll. not everyone plays with the intent to raid, and not everyone who plays actually thinks ahead.
I for one won't be playing something i won't enjoy, and if I only enjoy dps then that's all I'll be doing. It would be nice if every druid, pally, and dk had a second set of gears set aside for tanking just in case we cant find one but that's not gonna happen anytime soon and im not gonna get my hopes up.
