Enrage and Flurry both seem fierce losses, but due to the amount of resillience that can be stacked nowadays, crits on you and crits on others are decreasing a lot, making both of these skills less effective.
Except that even if you aren't crit, you can still proc enrage... enrage is an insanely powerful ability that increases your damage by a lot if the enemy tries to put any type of damage on you, and with flurry you're doing more damage to targets than you would be without it. I suppose this is the theory craft forum though, so you can come out with wild theories, but that doesn't make anything you say actually work in practice. Cookie cutter specs are the way they are because they've been used thousands upon thousands of times and proven to work.

That is true, but as you are stacking resillience you're reducing your chance to BE CRIT, and with it reducing the chance to proc enrage. And the reverse works for flurry. Besides, in 2v2 it's not uncommon you're the focused one, so having extra survivability rather than unsteady damage output might be a good thing.
Stacking resilience doesn't reduce the chance for enrage to go off. Attacks made against you that would crit, but didn't because of resilience will still activate enrage and blood craze. You're also missing anger management, which is a no no. Stacking defense rating for PvP is kind of dumb too.

I'd not give up Improved Hamstring either, its an immobilize so it doesn't share its diminishing returns with your stuns though it is affected by its own. PVP is all about control, at least for a warrior, and as much as I spamstring it goes off enough to make a difference.

Forgive the borderline necro, but what about this build:
http://www.wowhead.com/?talent=LV0xkAbaMhzbZVZf0tchhz
You have:
Arms
Anger Managment
Mace Spec
Imp. Intercept
Imp. Hamstring
Death Wish
Second Wind
MS
Fury
Cruelty
Protection
Tactical Mastery
Imp. Revenge
Imp. Disarm
Last Stand
Concussion Blow
It seems like a build aimed more at control and survivability, probably better for 3s and 5s than 2s.

Tactical Mastery > Flurry in PvP imo. That ability to stance dance with more rage allows you to increase your situational dps a great deal.
edit: failed grammar.
