For levelling, Shadow is how you do it quickly. There is zero cooldown if you do it correctly. Less than hunters, less than 'locks, less than mages. None.
If you feel the need for instancing, odds are people will be looking for a Holy Priest. Unless they want dps, then tag along as Shadow.
Don't be surprised if a group turns you down because you're not holy/shadow. Just like every class, it happens.

-Key is to DPS your target to about 40%, then wand it dead. When you wand it out, you're regening through your spirit. Then spirit tap kicks in. No cooldown.
Holy build:
They're all over. Do a 'lil digging.

Iralima's build works well for levelling Shadow. If you wanted to raid shadow, however, don't spec Spirit Tap.
The most common endgame holy builds I've seen are
CoH (Circle of Healing) Holy
and
Divine Spirit Holy
. The two builds are separate because you can't have Circle of Healing and Divine Spirit at the same time, sadly. It depends on what your raid will want and what you might want. CoH is very useful in heroics and raids, but Divine Spirit (especially the Imp version) is very useful to raid spellcasters including yourself.
