The same way we handled the "overpopulation" of blood elf paladins and draenei shamans.

I don't think this is as big an issue as some people are making it. Immediately after WOTLK is released, we may see a surplus of Death Knights. However, you have to remember that they start at level 55. They'll be running around Plaguelands. When they finish there, they head to Outland.
You have to level your Death Knight for at least 13 levels before you can head to Northrend. Don't you think there is maybe just a small possibility that a few of those people will decide that Death Knights aren't their class of choice? Don't forget all the other people who thought "there will be too many Death Knights, I'll just stick to my main for now." (I'll be sticking with mine)
Once the launch period has settled down - servers stop crashing, lag isn't as big of an issue, etc. :P - I don't think this is really going to be an issue. We may leave with a few more tanks - always a good thing - but I don't think the "DPS overpopulation" will be any worse than it is already.

50% Death Knights is an extremely high estimate.
First you have to consider that many players will forgo Death Knights at release and level up their existing characters to 80. While these players may eventually create Death Knight characters they will probably have multiple level 80 characters as well.
Some players will start a Death Knight, but never reach Northrend as they either find them too complex or simply dislike the playstyle.
Others will never roll a Death Knight at all because they have no interest in playing such a "dark" class. I rolled a Paladin not because it was a plate-wearing Healing/Tank/DPS hybrid, but because I enjoyed the whole "Holy Warrior, defender of the innocent" feel the class has. It's not all about the numbers.

Go roll play. I bet your main is a night elf hunter named lêgölàs.

I couldn't agree more. Every one jumps to two conclusions with Death Knights - one of them is obvious and one of them is just a silly assumption. The obvious conclusion is "everyone and their mother will have a death knight when Wrath comes out"....no kidding, its new, people like new - people will want to check it out. The silly assumption is "omg everyone is going to be playing a death knight and there will be a shortage of all other forms of tank/dps"....no there will not be.
Do YOU find EVERY SINGLE class in the game equally fun and interesting for you? Do you not have your favorite class - indeed most people have a favorite class but play many. I for one have one of each except I hate rogues and my fav is a warlock. Well the same sort of thing will affect the population of "hard core" raiding death knights at end game -- by the time folks level a DK up to 80 (and likely even during the mid 60's early 70's) they'll find out if they like the class enough to really play it with any seriousness.
Give it a good month after Wrath is out that's how long it'll take before people start to calm down about DKs.

I'm not really a roleplayer. To me the feel of the class is part of what makes the game fun. I don't have a Night Elf hunter... I do have a Dwarf hunter named Stoneshot... never really leveled the character seriously. Of course my charter's are irrelevant.
My point is, not everyone chooses their class based on numbers some pick because they like the theme of the class.
