Before leveling a prot pally? Deadmines.
After? Shattered Halls. ;p
Raid? UBRS! No, really. Kara is turning into the UBRS of BC and epix are the new blue. I imagine a few months down the line the last member of the nightly kara pug will need to be attuned. Remember how fun that was? ;p
UBRS was actually somewhat difficult for its time as well. Although I've pugged UBRS more times than I can count (30 times on my warrior, at least), I think I've only seen Drakkisath downed about 5 times. Just lucky that 2 of those 5 times my Draconian Deflector dropped. ;p
Zul'Farrak was actually quite difficult back in the day as well. But then they turned the fight of epicness on the pyramid to a fight of I just want to go to sleep-ness.

Only have getting up to Karazhan (Yes,i see this as a feat of accomplisment,Hardcores) my favorite instance of all time would have to be Old Hillsbrad Foothills the lore is extremely rich and the shear difference of the instance makes it unique from any other dungeon so far. You can catch me in the Old Southshore Inn sitting at the bar, looking at the past characters, laughing and saying "Ha,i slapped you silly then took your lewt".
