If you're specifically looking to do Heroics, then you're good on Defense - you're uncrittable, so call that good.
I would get a better Libram if possible -
Libram of Saints Departed
or
Libram of the Eternal Rest
are decent and come from non-heroic instances.
As for Stamina, you're right, you are rather low. I would aim for 10k+ health for doing the easy heroics, and that's if you've got friends or a gulid to run with; otherwise you'll likely run into the ignorance of people wanting BT-geared tanks and healers for their heroic runs. :P
The primary thing I'd say here:
Get your gear enchanted!
There are +Stam enchants for a lot of gear, and you'll get a decent boost to your health by doing so. Pick up a couple of cheap Stam gems for those boots, but I wouldn't do anything other than greens because you'll be replacing those as you get into heroics and/or Karazhan.

But,
I have to make a note that I would not accept you as the tank for 1 reason.... Enchants
When you do not enchant your gear it tells me that you do not care about maxxing your character, or just put little effort out.
If you put that little effort out in gear Why shouldn't i assume you'd do the same with your gamelay???
It is easy to grind the gold for the enchants. At the very LEAST grab stam for each slot.. the leatherworking ones... (oh, mp/5 on chest... not good grab 150 health or 6 stats)
Even if you are replacing the items soon, enchant them. It will make getting those replacements easier, and you might just find that people are more willing to stick it out with an undergeared tank that put the time/effort in to fully enchant the gear they have.
Edit:
Grab the 12 stam to boots.. it is what.. 12-15 arcane dust... that is an easy one.

485 is the minimum defense rating needed to be crit-proof in heroics, but your health is not going to cut it without an amazing healer and very good CC.
By far, the easiest upgrades for you are:
Shield: SSO exalted = Sunward Crest. Huge upgrade over the Netherwing shield, even if it does vaguely resemble the logo that Pontiac painted on the hood of Trans-Ams back in the 1970s.
Pants/Helmet/Gloves:
Faith in Felsteel
. They are not particularly expensive on the AH (on most servers), and are easily the best new-to-70 tank items available for their slots. Add solid star of elune to all 4 blue gem sockets for another 556 health, because you won't replace them until you have lots of badges and are farming bosses in Kara.

If you're already above 485 defense with only the crab, use Colossus. More block rating will help you generate threat when HS is active. If you're not above 485, then use Dabiri's.
If threat output isn't a problem, then go with the Crab/Enigma combo, since it will add to your dodge/parry chances, which is important, since you take no damage when either occurs.

If you have the mats and the recipe, work on getting the
Figurine - Empyrean Tortoise
. Not only should this allow you to swap out some Defense gems/enchants (+42 Def is HUGE) for Stamina instead, the 165 additional dodge on use is huge, and can save your butt on pulls that otherwise might kill you.
Plus, it spawns a little mini tortoise pet when you use it. :)

cool, that helps a lot.. i was wondering about the aura/blessing!
If you have another paladin in your 5-man, kings and sanctuary, if they're speced for kings. Otherwise, kings and wisdom. If you can get Kings, wisdom and sanctuary in the same 5-man, you may have too many paladins.
