Well, let me toss a paladin's perspective there...
After writing a few dozens lines for each class, I decided that a wall of text is not an answer to your question. Roll a paladin tank if your server isn't full on those. Tankadins can tank bosses and multiple trash mobs equally well, and the only slight problem are caster mobs, since we have no spell interrupts or reflects (but with WotLK Deathknights will supposedly take care of that). I am fairly confident that a well geared paladin tank can find a group for every instance, just as easy as any other tanking class. Sometimes - even easier (Hyjal trash, Heroic Magister's Terrace, Shattered Halls, etc).
Shadow priest...is nice. Fears, ridiculously high DPS, healing and giving mana back to your party...if you pair yourself with another shadow priest, you can guarantee that nobody in your group will run out of mana - you and your buddy included. Excellent addition to boss fights.
Warlock is another option you may want to consider. Again, huge DPS, some AoE capabilities, a bunch of fears, Banish, and variety of demons for different situations.
Druids are generally nice and easy to play, but I'd personally go either healer or moonkin. Druid tanks aren't anything exceptional to me, as a healer - they take slightly more damage than warriors or paladins, but also have slightly more hit points. And moonkins are the dream of every caster, because of the +5% spell crit aura. AND they have very good burst damage, which is priceless for PvP.

I think you're overestimating the shadowpriest DPS a little. It isn't huge, but it is decent. The reason people bring them is that they add excellent utility, by buffing warlocks DPS and giving loads of mana to party members.

Our shadow priests always need to watch their threat, even with salvation on...T4 and badge loot in a group with similar gear...
