There is not a "THE" profession for warriors. Blacksmithing can be useful, but ultimately it will not make a major difference for you (nowhere near having your level 69 mage tailor ding 70 and immediately don a full set of spellfire items that equal or beat tier 5). Go with whatever set of professions you like.

The only profession that is mandatory is first aid.
The rest doesn't matter. There are pros and cons to picking up a crafting profession, imo more cons than pros now. Gathering prof's are really good also in making money, its generally more profitable to sell materials than the crafted items they make.
Think about it, would you rather gather a stack of herbs and sell them for 40g. Then turn around and buy the potions you need for 25g. Or use those materials that you gathered to make potions for yourself? Odds are there are alchemists already in your guild that can make potions for you.

I'd say at this point that Jewelcrafting and/or Enchanting is the way to go. It works for both PVE and PVP and best bang since the gems/trinks/rings you can make from it can last you a long long time. That Shadowsong Panther trinket is good for both PVE and PVP (Yes there's Berserker's Call and and Bloodlust Brooch which comes from drop and badges), but you can also cut your own gem for yourself.
Enchanting? Well you can disenchant stuff and sell it or enchant your own stuff, or enchant somebody stuff for a fee/tip.
If you just started a toon, I'd go Enchanting and Mining. Mine as you level and when you hit higher levels, drop mining and go for JC. Just my two cents.

I'll always swear by Engineering, simply because Tankatronic's are amazing, and using them to farm motes is a fairly quick way of farming gold, and it doesn't matter what specc you are.

I went mining and BS on my warrior. Went down the route of Armorsmith and made the chest. The chest is serving me well but I know it will be replaced soon now that I am tanking Kara. In truth I made the chest out of spite having decided the armorsmith route before I actually started researching my toon. (My warrior is my first toon).
At this point I am rather disapointed in BS but since I put so much effort into it I refuse to give it up before WotLK. Perhaps BS will be given the shaft or perhaps it will be amazing.
I dropped mining once I had the A3 chest made and picked up enchanting. Truth is, on Icecrown you make more money farming greens to DE from BRD, Scholo, and Strat then you do fighting for nodes in the Outlands. That and I really like being able to enchant my own gear.
Had I known then what I know now I would not have picked up BSing. Huge invenstment for an end result comparative to a black cat on the 4th of July.
