Dodge does not factor into being uncritable. Only defense rating and resilence rating will.
A boss mob (effective level 73) has a base chance of 5.6% to strike you critically. Assuming your defense skill is maxed out.
Each point of defense will reduce your chance to be critically hit by 0.04%. So you would need an additional 140 defense skill (resulting in 330.4 defense rating at lvl 70) to become uncritable.
However feral druids who want to tank should max out
Survival of the Fittest which grants them a flat reduction of 3%. This means, you only need to overcome a base chance of 2.6% to be critically struk. This means, that you only need an additional defense skill of 65 (or rather 153.4 defense rating at lvl 70).
Resilence will also reduce the chance to be critally hit. Each point of resilence will reduce the crit chance on you by 1%. A level 70 character needs 39.4 resilence rating to achieve 1 point of resilence.
So, if you are sitting at 100 resilence rating, you will have an effective resilence of 2.53 (rounded down). This means, you chance to be critically hit (without additional defense) is a tiny 0.07%. To get rid of this you would need 1.55 defense skill (rounded up), resulting in a required defense rating of 4 or more. Pretty easy to achieve. :-P
Personally however, I shun away from resilence as it only provides mitigation and no avoidance. If you stack defense up to 415, you get a healthy dodge bonus as well.
I's pretty reasonable to get the require 154 (rounded up) defense skill by collecting rings, amulets and trinkets that feature defense rating. Then socket for stamina and enchant agility (or defense if you are below 415 defense summed up).

With Survival of the Fittest talent a druid is uncritable on 415 def. This is very easily obtainable even without any defense on you gear. Here's a few things you can do to reach the def cap:

This is of course if you have NO defense rating what so ever. If you find yourself having troubles with it it shouldn't be too hard to reach the cap.

The problem with these items is that they will all be replaced by the time you hit SSC. Then you will be relying a lot on, like you mentioned earlier, rings and neck pieces with defense on them. I really wish Blizzard would've thought bear itemization through a lot more when designing tier gear etc. I'm not saying crit immunity is too hard to achieve, but I've had times when it has been annoying as hell...
