More stamina and armor means less damage taken and being able to withstand alot of damage which also equates to less healing.
More dodge and parry means less chance to be hit, BUT when you do get hit, it takes away more health and you have smaller pool of health (if you hadn't stack stamina and armor).
So at the end of the day they both comes to about the same result. Also keep in mind that for protection warriors, getting hit a big part of gaining rage.
As protection warrior and other tanking classes/spec, I'd prefer stacking stamina and armor. Now if you're a fury warrior or a rogue, then avoidance and parry is preferred. The reason is simple, when the tank loss aggro onto you, you avoid as much damage as possible until the tank can take aggro away from you.
Have you guys heard of a rogue being able to tank a boss in BT with high avoidance? Well rogues can do it because they don't rely on rage.
