You should be killing stuff under your level while leveling
So that's how you guys got yourself to level 70.... No wonder so many bad posts then.
Wow... if you take on greens, your mitigation goes WAY up and your dmg output goes way up. Stick to greens while leveling, you'll do yourself a favor.
To the OP-
I am almost in EXACTLY the same boat as you... have a 70 druid. I really like it, but the rogue is just so much more fun for messing around. Level combat to 30, then switch to Hemo. 31 get Preparation... it absolutely rules. 32-33 get Dirty deeds... after that I've been throwing all my points in combat and haven't regretted it one bit. Here's my build at 45.

As far as what you want to do... you want to have fun with stealth, clearly, from your OP. Don't go without MoD and Camo, they are way too awesome to pass up on. I went for Initiative over Imp Ambush because one you get Hemo, you'll be doing that with Swords or Maces, not daggers (I suppose you could do a macro swap, but eh). Dirty Tricks is awesome, I'd love to max mine out, but the combat points are too good to not have. I also think that as long as your soloing, Initiative is worth getting for some free combo points as opposed to Elusiveness which you wont use that much while grinding levels.
Honestly, I think that once you hit the Serrated Blades (great rupture damage, especially at the last 1/3 of the mobs life with Dirty Deeds... use it!) Hemo, Preparation, Dirty Deeds, you'll absolutely love the soloability and you'll be able to level great with Subtlety. I'm really glad that I didn't go further though... Lightning Reflexes, Precision, and Dual Weild are just too awesome.
Enjoy your rogue, bud. Druids are fun with a tank/healer mode, but Rogues have so many tools (lockpicking, vanish, evasion, sap, blind...), it is way more fun messing around in PvE and PvP than a druid, imo.

Getting Hemo five levels early (in lieu of getting Malice) will help you level faster if you plan on going sub.

Hey, Wildhorn Jr, enough of that. We don't need it.
Crazybear, good call on leveling Subtlety. I first leveled as Combat, then the second time around I did it as Subtlety; I enjoyed it far, far more being a sneaky ninja! Hope to have fun, and the above builds will suit your needs. Good luck!

Do
this
, then
this
, then
this
.
Don't level as daggers unless you really want to. Despite what some people in this thread seem to believe, subtlety is not 'built for daggers', and all dagger specs
are
slower for levelling.

Thats what I was thinking, sub does not necessarily mean "go daggers or go home".
It's quite the opposite, funnily.
Mutilate is the only viable PVP dagger spec when it comes to end-game PVP. Shadowstep daggers is nice for seeing large numbers on lowly geared opponents in the occasional battleground, but it's no stronger than hemo subtlety, and a lot weaker once you go up against reasonably well geared/skilled opponents.

Cheap Shot - 4 sec stun and already have 2 combo points
Hemmo - 3 combo points in and increased physical dmg done (should be able to get in another one before CS wears off)
Rupture or kidney shot
By then white dmg should have most mobs to about 20% hp or so.
I do Rupture as my general rule (obviously there are times for KS). Serrated blades makes it do 30% more damage, and that will stack when it's ticking at the end of a mobs life with Dirty Deeds making it do another 20% more damage on top of that. It's amazing how much damage output you get from your rupture.
