How about the Razorstrike Breastplate ? I made one for myself, it is a very easy LW pattern, and anyone can wear it. It has very slightly better stats than the Gilded Ringmail Hauberk, and trades armor penetration for crit.
Eaglebane Bracers add 34 hit rating, for only very slightly decreased stats.
I would also add the Ice Striker's Cloak (obviously, I am a lw)
I can think of a few rings that I would add, consider the Stained-Glass Shard Ring, Bjarngrim Family Signet (also fun for its unpronounceable name), and the Hemorrhaging Circle (an epic that drops in H-gundrak, a fairly easy heroic)
You haven't mentioned weapons, but heroic Utgaurd Keep drops the epic crossbow Drake-Mounted Crossbow --and it is the first heroic to run, easy to run shortly after turning 80. I believe it to be the best ranged weapon that can currently be acquired without a 10 man raid. (Dwarf hunters may want to stick to one of the very nice blue guns that drop in various places).
For melee weapons, the best stats seem to come from the Runeblade of Demonstrable Power, with the Wyrmclaw Battleaxe and the Whale-Stick Harpoon (the harpoon offering hit rating in exchange for crit) being very close alternatives--all of which can be acquired without ever running a heroic.
For trinkets, I am currently still using my Empty Mug of Direbrew (my only BC hold-over), and the First-Mate's Pocketwatch. The Mirror of Truth is gorgeous, but I am not sure if there are better items for a hunter to spend her emblems on.
Boots, I have Dragon Slayer's Sabatons, but for 40 emblems you can purchase Pack-Ice Striders and Kirin Tor rep provides Boots of Twinkling Stars, and Argent Crusade rep grants Boots of the Neverending Path if you don't mind wearing leather.
Of course I realize that this is all incomplete, but there are many also epics that can be purchased with emblems of heroism.

This is overall a great thread. I may not be at level 80 yet, but with this guide I'll at least know what sort of items I should be aiming for while leveling up.

I love this guide. However it seems that nobody talks about gem socketing. I am sure that the different hunter specs may require different gem placement. I have tried searching for them on this site but it is all very confusing to me. Especially pre-raiding since, unless you are rich, you don't want to socket epic gems in items you will be replacing once you start raiding. I am currently a BM spec hunter but am seriously considering respecing to Survival.
