You've got it all backwards...Paladins are better at main tanking when there are multiple mobs, due to AoE and reflective damage. So, your paladin tank uses Avengers Shield to pull, then consecrates, and generates additional threat using holy shield because there are 3-5 mobs pounding on him and getting damage from it. Then, even if the attacks aren't blocked, threat is being generated by retribution aura for every hit that is not blocked. (This is why you often hear paladin tanks say "I don't need CC." In most cases, if you give your tankadin a little time to build a threat lead, there are no strays to worry about.)
Meanwhile, your warrior tank (who is better at single-target tanking) picks up the stray mob who didn't get sucked into the paladin's threat envelope (rare), or goes for the caster who refuses to be pulled. When you get to the boss, the warrior will be a better choice as MT (though paladins can still do it effectively, just not as well) because warrior tanks are designed for single targets.

Well, since every warrior talent spec is accepted for raiding/endgame, there's no reason for warriors to be tanks anymore, which is why you don't see many prot warriors. This, in spite of the fact that warriors are supposed to be "the best tanks." Whatever.
Meanwhile, paladins get to tank or heal; if you love ret, learn to love PvP.

You need 2 tanks for karazhan. And if you get a prot warrior, you may as well make him MT. He isn't going to be good for anything else.

You see loads of prot warriors. It seems to me the majority of raiding guilds have a warrior MT.

Maybe it's just me; I rarely see warriors with shields, the one warriors I have seen who tried to tank thought they could do it without one. Then again, I'm not in a raiding guild.

I suppose it is doable with one tank, but there's no reason to complicate things that way. Having two tanks is infinitely easier. If you lack DPS when you bring 2 tanks, then your DPSers suck.

If I can, I usually always try to take a feral druid if possible, since he can dps as well. But I would never take two prot specced paladins or warriors, since more dps means a faster and usually smother run (ever tried prince with 7 dps? he goes down before fire elementals could be even near to pose a problem :)
and again, it doesnt really complicate things if your tank and healers know what to do.. not to mention the person leading it ofc.
Well, I pretty much always go with a feral druid, so that basically solves it right there. I do agree that taking two prot specced warriors or paladins is unneccesary and will gimp the DPS (at least to some degree).
I just think that solotanking it, while I have no reason to believe it is impossible, will in my opinion be completely unneccesary and bring more risks than the small loss of DPS from having an offtank. Even if that offtank happens to be prot specced.
The "if your tank and healers know what to do" requirement is the issue here. If you go with a group of close-knit guildies with lots of PvE experience and skill, then you can do all sorts of strange things and still clear Kara without any trouble at all. But those strange things could cause trouble in a PUG.

Make the pally go holy. It'll lessen the pain later when he is no longer a viable tank once you get out of kara. We use to have a prot pally main, but he went back to holy after it became clear tanking hyjal trash was all he was going to get to do.
Not saying that prot paladins have no place, it is just that you can't beat a warrior or feral druid for single target (raid boss) tanking.
