The Priest class is just always what I've played and loved. I've been completely in love with Priest healing since TBC raiding when my guild finally let me spec fully into Discipline. I kept telling them everything I could bring to the table as Disc (what with the then Power Infusion, Pain Suppression, and immense damage mitigation). And even now I find I enjoy playing holy just as much as disc. I guess what keeps me playing a priest is the fact that everything they do, they're very good at it... whether it be raid healing, dps, tank healing, what have you.

For me, it started towards the end of WoTLK. That's when I first started playing WoW when my uncle convinced me to give it ago. My character was a Druid and I was loving every moment with her. I joined a dungeon one time and noticed a shadow priest had joined with us, too. He was our healer. You can understand my confusion. I was relatively new to the game, so why was a DPS spec joining as a healer? Well throughout the dungeon this shadow priest remained top-DPS as well as being the healer. He was pulling about 5k, which back then was considered high.
So I decided that after my Druid I was going to make a Shadow Priest. And I did. She is currently at level 87, but I've unfortunately had to stop playing WoW because I'm in my final year of university and have a tonne of work to complete and cannot afford WoW as a distraction. I can't wait to return, though.

That's actually how I made a friend in WoW. :)
I was bored and was randomly inviting people to my group and pulling them towards me with Leap of Faith, where I would just leave the group afterwards and tell them I was messing around when they demanded an explanation. I did it to one guy outside the AH in Orgrimmar and after that we just started talking and became friends.

I've always been akin to healing...no matter what game I've played. Whether it's Final Fantasy or WoW, I've always leaned more to being a healer/defender type...which is why I enjoy playing as Holy so much.
I started out as Shadow, thinking I'd
never
play as a healer, but when my guild asked me one too many times to change specs (back before Dual Spec was invented!) I stayed Holy and...well, here I am. :) And it has it's own challenges! Sure, they've made survivability a bit easier to deal with in the recent expansions...
That and as a Holy priest, I hold lives in my hands... *evil laughter* My motto? I don't heal through stupid.

Priests have the most extreme capability to be more obviously "good" or "evil". In Holy or Disc, you are somewhat benign, intent upon protecting your friends.
In Shadow, you are a vengeful ghost, wreaking utter destruction upon your enemies.
To me, Warlocks are pansies next to that. They need pets if they are to aspire to the pure, malign potential of a Shadowpriest. And mages are just too goofy in their dabbling with lesser, elemental powers.

On the non-lore side, I like the fact that Priests are dual-role. (Warlocks and Magi are not) I like that I can provide a raid-wide mana CD, most of all to benefit the healers. I like that I can switch to heals for fights which require 3 and not 2 healers. In every raid I have run, since starting my priest in Wrath, I have been the "switch $%^&*" on the team. And, unlike most dual (or tri-) role classes, most of my gear can be applied to both specs.
I particularly love being an Undead Priest. I come up with the most fun mogs to use. Popping wings on an undead guy, and then eating corpses for mana is just.... wrong. Yet, very very cool.

Lawl... I've seen a couple of Tauren Shadowpriests.
I've just got to say, it makes me giggle to see shadowcow apparitions walking into a boss during a fight.
(Tauren Monks are almost as funny. Especially when they roll)

Priests are super-versatile. Almost-instant queues, lots o' dots (not as many as the Warlock, but more than most classes), and yanking people away from the brink of death, both figuratively (critPenance, as well as pretty much any crit-heal) and literally (Leap Of Faith).

I enjoy them because they have 2 different healing styles. If one gets boring I can switch over and have a new one without having to worry about getting different gear or anything. Also Shadow is good for doing dalies if needed and it does a good amount of dps and is fun to play. All of those combined with the fun use of the OP shield and being able to fling my friends around in RBS make it fun.
