In this thread when it turns Saturday GMT a new weekly challenge will be posted. Nothing difficult or dangerous will be requested of you, but the goal is to make people discover a new perspective on things. Anyone is free to set or request a weekly challenge, though I'll only have one active at a time (other ideas may be visiting a museum and writing a review or sharing a recipe for instance).
This week the challenge is to find or take a photo of an area near where you live (I think donny will be at an advantage). My dad took
this picture
in Hayes which is about three miles away - Orwell lived there for a time. I initially planned to take a picture of a field near the house (the light works well early in the morning), but this photo popped up on my dad's facebook and I thought it'd suit the purpose.

is one I took while on a 15 mile hike in the
Badlands
. The Badlands are about 40 minutes away from my town, and is simply gorgeous, especially around spring time. It definitely makes one feel proud and fortunate to have such gorgosity so close to enjoy.

I think this us an awesome idea for a thread. Anything that prompts people to get off their arse and do something is a good thing.
I've already taken plenty of photos of Hamilton Island which I have shared here, but in the spirit of the challenge I'll take a new one this week.
If I have a suggestion for the next challenge, should I post it in this thread, or email it to you?

pikey, do you have a youtube account? If so you can just hit upload and it's fairly simple (find file on PC). Description and editing can be done using youtube's tools.
Suggestions can be posted in the thread, my email is just my username at googlemail.

This week's challenge is to share a recipe for whatever piquant or picayune food you desire. The more arcane or personal the recipe is, the better (ideally, it'll be totally novel for other people replicating it - no ingredients that're impossible to find outside of the Sahara though!).

El's AMAZING Eggplant Parmesean (courtesy of El's mother)
I don't generally measure stuff for family recipes, but i'll try and estimate. This is going to take 3 hours+.
- 2 Large or 3 medium or 4 small Eggplants (Brinjal)
- Italian Breadcrumbs- 1 large or 2 small canisters (If you just have plain available, add basil, oregano, rosemary, a dash of garlic powder, sage, thyme, marjoram, savory- just a pinch of each for a large canister)
- Canola Oil (enough to put about an inch or inch and a half of oil in the frying pan)
- 2 Eggs
- Milk- maybe 3/4 of a cup
- 2 Large jars of tomato sauce (or a homemade sauce if you are a stickler)
- about 24 oz. Ricotta
- about 2 lbs of shredded mozzerella cheese
- 1/2 cup grated parmesean cheese
- Garlic Powder
- Salt
1) Skin the eggplant, and slice into discs about 1/3" thick
2) Mix the eggs and milk in a small bowl, and beat togther
3) Dip each slice in the egg mixtures, then bread with the breadcrumbs
3) Heat up the oil in a frying pan (or 2 if you want to get through it faster- it tends to be a lot of eggplant) to medium high, and then fry all of the slices until they have a nice golden brown color, and are cooked through
4) Mix the ricotta, pramesean and the mozzerella in a large mixing bowl- you may not need to use all the mozzerella- I generally eyeball it and I don't know how to describe what it looks like when it's right. It's hard to have too much cheese, though, so just make sure the mozzarella doesn't copletely overpower the ricotta.
5) Season cheese mixture to taste with garlic powder and a little salt, but don't overdo the salt
6) Pre-heat oven to 425 degrees F
7) Get a large glass pan- generally we use a cake pan that's about 18" long, like 10-12" wide and about 3-4 inches deep. Spread a little tomato sauce on the bottom- just so it isn't dry, and lay down a layer of eggplant that is as close to a solid layer of eggplant as possible. Then top liberally with dollops of the cheese mixture- it should be a thick layer of cheese between each layer. Top with tomato sauce- don't drown it but make sure that the layer is covered.
8) Repeat step 7 two more times, so you have a 3-layer dish, or until you run out of eggplant.
9) Bake at 425 for about 45 minutes and yum!
Also, if you are like me and hate wasting food, you can mix your leftover breadcrumbs and egg-milk mixture, and mix them together into a semi solid "dough" (might need to add a little more bread crumbs or milk to get it to even out) and make little patties, then fry them when you're done with the egg-plant and make "breadcrumb cookies." We generally ate those while waiting for the eggplant to be done, and they're good with extra cheese mixture and sauce,

Oh yeah- I forgot the parmesean- lol. I'll edit it.
I was really tired when I wrote that- just woke up.
Any vegetable oil will work- I just use canola because it's cheap and you need to use a lot of oil to fry up all that egg-plant. Olive oil will probably make it come out better.

Oooh, I forgot to add my own recipe. I'm no good at cooking (though as an additional challenge, I may attempt the recipes suggested so far), but I don't think I've seen anyone else make this:
Porridge oats: 120g~ (a bowlful).
Coconut yoghurt: 100ml (enough to mix).
Baileys: 30ml (just less than a shot).
Edit: Thanks for the responses so far by the way guys, great pics. Hope the food turns out good when I have a crack at it later in the week too.

My favorite thing to make is a good old roast.
1 3-4 lbs roast, with your meat preference, thawed
3 cloves of garlic, minced
Salt and pepper
2 boulin cubes, beef
3 cups water
1 small bag of already prepped baby carrots
1 packet of onion dip mix (make sure it's the dry stuff)
2-3 cups of flour (optional)
1 crockpot
Place roast in crockpot, and put the minced garlic cloves on and around the entire roast, and season with salt and pepper to taste. Place boulin cubes in crockpot. Pour in water and put in the carrots surrounding the roast. Pour the packet of onion dip mix onto the roast, as well as in the water. Cook on low for 6-8 hours, or until roast is tender. (or, cook on high for 3 hours and keep an eye to make sure the roast doesn't toughen).
Turn off crockpot, and take the carrots and roast out.
Opinional: Wisk flour into broth, thickening to preference for gravy. Make sure you made some mashed potatoes before doing this, or else you'll have a bunch of gravy just for your roast!
Of course, all ingredients are optional and interchangable according to what you like. Also, measurements are off because I just kinda know and had to guess what I use!
This can also be made in the oven at 350*f for 6-8 hours. It's definitely something that you can prepped the night before or the morning of, let it brew while at work, then enjoy supper when you get home :)
