There are a number of restaurants here that serve them with melted cheddar, bacon and either ranch or sour cream. I like them that way, with the sour cream.
I very rarely actually eat them this way, though, because it's horrible for you.

An entire thread dedicated to french fries? I don't quite see it. I thought for a minute that Elaus was back.
McDonalds has the best fries, until I found out they support Planned Parenthood. It's like finding out your delicious food is going to fund genocide, only, it's not like that at all, because it is that. That's what it is exactly like.
Amazingly, for as much as I love McDonald's fries, after I learned they supported Planned Parenthood, I actually feel more disgust with their french fries than I do adoration for the flavor. The prospect of purchasing their fries makes me sick to my stomach, thereby eliminating the problem I have not eating them anymore. But, I guess I only had them a couple of times a year anyway. I'm not really a potato kind of guy.

I've stopped eating chips, but garlic mayonnaise or garlic salt + salt and vinegar is bliss. Especially with a pickled egg. Never had chips by the seashore though.
Edit: I remember going to Ireland a few years ago and being certain I could eat a five euro meal, but they actually served us a full plate of chips, with a full plate of mashed potatoes, with a full plate of vegetables... For five euros each (person, not plate). Was nuts.

I don't overly mind massproduced fries. They taste all right.
However, I prefer making my own. I grow some potatoes, so cutting those and then frying them is godlike.

I like the curly fries they have at Arby's myself. After those would probably be Whataburger fries. While I was working at McDonald's I would take their Ranch and Sweet Chili sauce and mix that. Haven't been back there since I was fired though, but I don't care much either way.
Of course I'll sometime make my own fries or chips, I'll just add some salt and pepper to them. Lately we have been mixing a Honey BBQ sauce with some Mayo to dip fries in.

We used to make sweet-potato fries at this place I waited tables in college, and for those they made a dipping sauce out of maple syrup and mayonnaise, and that was amazing.

Chips and gravy is something of a staple here in the north but my favourite chip experience is Fish and Chips from somewhere coastal (preferably Whitby but any fishing town will do) with lots of salt and vinegar, a pot of tartare sauce and a pier over which to dangle one's legs while eating (and fending of gulls with a plastic fork). Magic!
