This is all a bunch of ramble , its all Personal opinion and preference :
1. Like casting awesome looking spells ? Like summoning cool demonic pets ?
Try a mage or warlock
2. Want to level to 70 ASAP ? Want to get group invites like nothing ?
Try any healing or tankish class .
3. Want to get to level 70 ASAP just by grinding mobs ? Like having cool animal pets ?
Hunter.
4. LOVE PvP and being sneaky ?
Rogue.
5. Like being able to shapeshift into animals and have the choice of tanking , healing , melee dps , OR ranged dps ?
Druid
Anyways , its just about what YOU want to do.

Mage. As much as I like the warlock, mages are in more demand because of superior CC and the ability to decurse. Also, frost = cakewalk when solo.

I would go either druid or hunter. Yes, hunters can be hella hard to find a group as, but once you get a little bit of a reputation going, people will be glad to have you (at least, that's how it was/is for me). They are also superb soloing classes, arguably the best, not to mention, extremely powerful in pve as well as pvp (for teaching those nasty gankers a lesson).
As a druid, also a superb soloing class (also arguably the best), you have more versatility, yet I find my druid to be slightly weaker in both pve and pvp than my hunter. Yeah, I can heal, but a hunter's feign death is tough to beat. And while having stealth is awesome for pvp, my druid crits for ~1/2 the damage that my hunter does...yes I know there is a 4 level difference, but still...the burst damage really just doesn't compare.
Hunters will pump out more damage than a druid, but druids are excellent tanks for 1-3 mobs (any more gets to be a challenge).
It's really up to you, but that's just my two cents.

I have played warrior, rogue, hunter, druid, shammy, and pally - half to 70, the others to at least 60. I "disposed" of those characters, but have been enticed by friends to start playing again. So here is where all of you come in.
If you had to reroll on a new server and could only make one character - what would it be and why?
I appreciate your help. I have been trying to decide for days and I just keep making guys, playing them to level 5 and then deleting and making another. Opinions?
First of all, DISREGARD EVERY RESPONSE from every person that answered your question without first asking the fundamentally important question...
is this for pvp or pve?
for pvp: rogue, warrior, druid
for pve: druid, shaman, warrior
for the correct answer: the class that you enjoy the most

If I had to choose one and only one, I'd choose a hybrid class in case I changed my mind on spec sometime on my way leveling to 70. My favorite hybrid class thus far has been the paladin.
Prot specced for leveling and tanking instances at the moment, but I'm playing with the idea of respeccing holy at lvl 60...
Yes, I would listen to somebody who hasn't hit 70 yet. Yes...

Warlock, because it can solo most huge group quests, a few old world bosses, and does huge dps.
Yes, I would choose a class based on the ease of soloing quests. Yes...
