That's my point. I doubt a priest will become one of those things (well, archaeologist is plausible) for one reason.
Being a priest is a job.
My other reasoning: Christian monks were often the ones illuminating and scribing copies of the Bible. They had to know how to write and read, and since the monasteries were often self sufficient, they probably made their own ink as well, not to mention farmed their own food. The Church of the Holy Light is an expy of Christianity.
A combination of herbalism/inscription fits perfectly.

The guy did ask; and it is true that most of the 'important' inventions do come from the Dwarves due to their culture. I also said arch because that's the primary belief that is starting to pass through the Dwarven nations: That by learning from their past, they'll learn more about the creation of everything.
And really, even a dwarf priest or mage are still built like brick houses; like it would be that hard for them to take up smithing or tinkering if they really wanted to.

I'd agree with Funden. Tailoring/Inscription could also work, because I imagine monks and priests (at least the out in the field type priests, not necessarily the podium televangelist priests... :P) would know how to patch up their robes if they were torn.
