Either Monks or Runemasters -
http://www.wowwiki.com/Runemaster
Basically any spiritual class that uses mainly Fist Weapons and rune/spirit magic along with powerful melee attacks.
They could get +Attack Power bonuses from Spirit and have their own cool armor sets that looked like leather harnesses or something, since they can't wear heavy armor. Maybe even self-healing and rezzing spells ala the Monks from Final Fantasy Tactics.
I'd love to play a class like that :D
However, a class I would NOT play would be a Bard.
"OH YEAH LOOK AT ME, I GOT THIS BADASS EPIC HARP AND I'M GONNA SING AT YOU TO DEATH."
No thanks.
(Course my opinion is probably warped from playing as Edward the "spoony Bard" from Final Fantasy II (the 4th game chronologically), who did crap damage and ran like a chicken when his health got low.)

Heheh...That brought back memories. Edward was my least favorite character in that game. I was glad when he died, and got whats-his-face-the-jumping-guy back.

Bard: Short-duration, non-instant spells. Kind of like seals, shouts and totems but with casting time.
And the ability to move while casting.
I think Everquest actually did a very good job with the bard class, as far as it functions is concerned. It is just that their unique spell system and specialized requirements (e.g. instrument mods) made them hard to balance. It didn't help that their code was reportedly a mess and very likely no developer truly understood them.
The ability to create your own effects by mixing different songs would be nice, but ultimately worthless (people would rely on virtually the same constructions) and I don't think WoW's spell system could handle it anyway.
As for a class that hasn't been mentioned yet: eastern warrior/samurai. Basically a rogue specialized in two handed weapons, probably only polearms (long range slashing weapons, such as glaives) and swords. To steal from FFT, specialized positive and negative effects based on 'drawing out' the spirit of his weapon (though without a chance to break it, as was possible in FFT). Trees: Soul (increasing the effect of his 'draw out' powers), Sword (increasing his physical ability, primarily focused on sword weapons), Spear (same, but for spears). Alternatively, instead of Sword and Spear, Body (physical-focused regardless of weapontype) and... well, I can't think of anything for the third tree.
Too bad none of these ideas will see implementation.

Oh gods. EDWARD, YOU SPOONY BARD.
