Hard to choose, I am most proud of: What a long strange trip it's been, and ITS OVER NINE THOUSAND!
Vampire Hunter takes the cake. The first time I went raiding was in Karazhan, during the pre-launch event that spawned the boss. We downed the boss, we got our pets, and then we continued on. The best part about it was that we went in on the weekend, before the lockout expired. Someone was looking to just get their bat and didn't care which raid they got in. Specifically, they just said they were "lf kara" in trade chat. Nothing about the boss. So my guild at the time, who were inexperienced raiders just like myself and didn't understand how raids and the lockout worked, invited the guy. Just trying to be nice, y'know? Turns out the guy would end up getting saved to an instance with the boss downed 2 days before the event ends. Uh oh.Then he called us names and tried to wipe the raid. I felt less bad after that.
I have to say my favorite achievement is the World Explorer. It took a while but i got those places checked out and marked of my to do list =D

I'm most proud of my salty achievement. I always wear my title and my fishing outfit whenever I can! I would dearly love to see a new fishing revamp though, something that makes fishing rewarding without screwing raiding players our of their food buffs would be great:X More pets, mounts, gear, and cool recipes would be good things to add!
My shinny new Core Hound Pup (broken link?), courtesy of Blizzard, which I apparently earned after having successfully recovered my account for the 7th time over the last two years, hosts of glorious raging e-mail battles, several barred guild memberships, shattered dreams, and a two month account rollback.
I'd have to say Beware of the 'Unbeatable?' Pterodactyl is my favorite (the one modeled after an Atari game called "Joust"). Just getting the achievement was a reward in itself, because it meant that even though I hated the gameplay and thought the controls were just god-awful, it also meant that I kept at it, pushed through it, and finished all of the jousting quests. It was a badge of honor. :-P
My Favorite Achievement is Dreadsteed of Xoroth. Makes me sad you can no longer do this quest. I loved the chain, and doing the quest really makes one appreciate the Warlocks epic mount. =)
I really liked Zalazane's fall. It was really great to help free up the trolls and feel like you were actually doing something epic. Nice loot for doing it also.
Favorite achievement for me is Reins of the Raven Lord . I remember seeing someone with it long time ago and I was like "Must get!". Looked at the quest line and comments about "Been farmin' fo 3 months now. Notta thing yet." and my enthusiasm took a dive... Ran in with Druid one day one and nothing, felt like I was gonna join the rest and farm forever. >:3 Next day I was rollin' on my new mount. Got it on second try.
The Twilight Zone (10 player) is my favorite one. Ten player, because of the Nightfall is the prettiest title ingame. :)
