For me it was What a Long, Strange Trip It's Been. Crazy enough I got it on 2 alts at the same time. I figured.. if I am going to do it once.. twice isn't much harder!
There are a ton of great achievements. I think though the best one i have received became a Feat of Strength.. but I love the Achievement: The Undying. I had been with my raid group for a while and we all wanted to get this achievement, to the point that we would log on, on off days just to have a shot at it. Sadly a few times people died to silly things or just couldn't move fast enough. But in the end we managed to beat all the bosses and move our butts through that place and obtain that title. It is one i love to wear with pride because i know I did it with people that wanted it just as much as I did. May not seem like much but to me it will always be the best achievement because of the people I obtained it with and our dedication to getting it in the first place.The Undying FTW!
the achievement i'm the proudest of is probably "hotter streak". Had been struggling for a while with a decent team to hit around the 1900 rating, and out of no where go this awesome winning streak got the achievement and soon after that another arena achiev. =)
Why? Because Its Red in my Favorite achievo. Because I like my mounts when they are WAY more speedy then the rest when Its so painfully obvious it beats the competition hands down because its the Red one of course

My most prestigious achievement is my Raven Lord achievement. I got it back in TBC. Won the roll at 47 I believe and that was the most heart pounding moment because back then, the Raven Lord is ranked among the top. Only if I had an Al'ar too, that would be so bad---!
Mine was Turtles All the Way Down because I got it from the very first pool I fished in Northrend, and it makes fun of a rather silly idea that the Earth is supported on the back of a giant turtle.Edit: it seems the achievement now reflects Cataclysm zones, and not Northrend zones.
Most proud of Battlemaster achievement since it took a lot of time and effort. Took like 1500 battlegrounds to get because of random achievements such as winning 1600 to 1590, coming back from behind down by 500 points, and getting AV Blitz without a premade group took a few hundred games.
45 exalted reps....cause i got "The Exalted" for the second time.
The achievement I am most proud of would have to be My Storage is "Gigantique"
The achievement I'm most proud of is World Explorer. Sounds kind of lame, since it's one of the easier ones to get now, but I did it the hard way. I was only 71 when I got the achievement. Doesn't sound so bad, until you remember that at that time, there was no flying in Northrend before 77. That's right. I did corpse runs and hopped from graveyard to graveyard until I had every last inch of Northrend explored. I remember spending days working on it, and the number of hours spent in Stormpeaks was nearly maddening. But even the suicide sprint/jumps toward Ulduar paid off. I was an explorer at 71. I was so happy every time I got a whisper from someone who realized what I had done, and wanted to know how. No other achievement has been as gratifying as that one was.
My favorite achievement is A Tribute to Immortality.This is beacouse not only it is the most rare one but also it is not obtainable anymore. To be honest it shows your and your guild's power.And the achievement I'm most proud of is it tooks time to complate and ofc. it gives you Master Riding without paying any fee and ofcourse an ugly mount (Reins of the Violet Proto-Drake)...
I'd say I'm proud of my Zalazane's Fall / Operation Gnomeregan and Tripping the Rifts achievements, since I JUST missed the Wrath of the Lich King beginning events way back when I entered in late BC and was barely level 60 by the time the events hit. Achievements like that are a proud badge of saying "I was THERE when it happened." I loved actually being part of an ever-changing event that would forever alter our world before we knew it. Definitely an exciting time.

My Favorite achievement would probably Rapid Defense (Dragonblight speed daily quest). When i first tried to get it, the timer was so tight it was ridiculous. I didn't have anyone to damage the dragons for me, and didn't even think of doing it myself. Must have tried that achievement for hours. Then one attempt the stars seem to align. Mobs popped up just as my CDs finished, and I didn't need to search for anything. It's kinda lame, but it's probably the proudest I've been of an achievement, surpassing even the harder raid ones that took just as long, probably because I had to do it all myself, and i knew 100% that it was just me improving. I think they've nerfed the timer since then, since I've gotten it first try on 3 alts so far :\ At least I have the memory :P
