Getting Firefighter (10 player) holy crap was that fight nuts, but freaking fun as well when you had those clincher moments of 'oh no! no more room to move! D:' or maybe it just means i'm a glutton for punishment sometimes.... still loved the feeling of getting that one done! That and getting Dreadsteed of Xoroth back on my lock when you HAD to do the instances, such a pain getting a group for those instances, but seeing my old main on that for the first time made me proud to play her. Granted does it really count since i had that LONG before achievements were even thought of in WoW?
I would have to say my most proud of achievement would have to be Loremaster. Been playing for a little over a year, heard it was a great accomplishment to have and after all the many quests (even doing some that didnt count just for fun) I was elated when it popped up! I am proud and will continue to wear the title for a long time. I really do think it would be cool if we could have a yellow exclamation over our head. Would love to see how many people chase the Loremaster's.

To get "Shake Your Bunny-Maker" for my wife, I had to to make and level up some trash toons on Alliance because for the life of her my wife couldn't find any bloody female dwarves. So it took a while and I had to suck up playing alliance, but when my guild got wind that I was basically speed-running through puberty so someone could make me "Shake my Bunny-Maker". Well, it was several hours of laughter that didn't die in vent.

My favorite achievement is good networker because its the only one i have, and i could really use a faster computer to get more.
The Frozen Throne (10 player) My guild managed to get it just after the 4.0.1 patch hit. We worked for months to get ICC down, and we did it just in time. So proud of the raid team that I took over leading that we killed the current boss of the expansion. Definitely an epic fight. Even sweeter to go back and get this baby Bane of the Fallen King after Cataclysm was live for a month. The fight isn't that easy yet. :) Especially with Infest.
My most favorite achievement, which I am still very proud of to this day, is definitely The Immortal.Not only does this achievement grant an epic title, it was also fairly hard to get even at the end of the expansion. Everytime I use it, I think back to the days of Naxx, when I was new to raiding and every single boss was scary to me. Visited the instance again, in later, to get this achievement - it was a true adventure. The bosses, still quite deadly to an uncoordinated group, were very challenging.Venturing into Naxx again with my guild, we didn't expect it to be as hard as it proved to be. We were decked out in the latest epic gear and naturally assumed Immortal is within our reach. However, we didn't get it on the first or even second week of trying. Slowly becoming frustrated with the lack of attention our members paid, we gave up for a couple of weeks, but came back later and after all the times we failed it on Thaddius or something similar, we finally got it! I remember the feelings related to this achievement. The great disappointment when the achievement was failed by a stupid mistake... and the joy when we finally got it. It was truly great, and I felt proud of each and every person in the raid - even if it wasn't extremely hard to stay alive, it was still an achievement that proved you and your guild were capable of not dying to stupid things. The screams on vent the moment we got it, the spam in raid chat, as silly as they may have been, were a moment to remember. :) (Although, everytime we down a new boss, similar things happen... My guild loves to shout in my ear. Ouch.)All in all, I always viewed the Immortal as one of the harder ones, with a truly epic title for a reward. Many people I know tried for weeks at the end of WotLk and didn't manage to get it; I'm very happy to be one of those that do have it. I wear my the Immortal proudly, and I don't think I will replace it anytime soon.
