How to choose just one? As an achievement *ahem* lover I go after as many as I can. I completed "Insane in the Me,brane" pre-Cataclysm and I was very proud of that, I also got two realm firsts: "Realm First! Grand Master Archaeologist" and "Realm First! Illustrious Archaeologist". Both were a huge surprise, I was going after them but had logged off and actually slept and was having a hard time getting feedback as to whether or not anyone else had achieveed it already. When the first one dinged I was re-energied and able to push the next few hours into the ullsutrious achievement. It was great and well worth it.
The Frozen Throne (10 player) It was a big accomplishment for our raid group (since we were the first in our guild to do it). It has deeper meaning since it was the last time I was able to run with my guild period which is a shame since we were a great group.
Insane in the Membrane.It barely edges out It Belongs In a Museum (20 archy rares and the Professor title, before 4.1 came out and made it easy).
Earning my Salty title. Two years later -- I'm still using it!
For me, I'd have to say either my Loremaster or World Explorer, Pre-Cata versions. :D Took me a bit due to time issues, but I finally got them, a couple months before Cata came out.
What a Long, Strange Trip It's Beenthats the one, it took me some time, but im really proud to have gotten it recently, along with the Reins of the violet proto drake.It was the funniest archievement to get, and the letter from alextrazza was better yet
Definitely my Glory of the Raider (25 player)... The Immortal eluded us for quite a long time, till we kicked the guildie who we found out was continuously messing up on purpose (he had already gotten it), so we kicked him. Next attempt -- boom, cheevo!
I'd say for me it'd have to be It's Over Nine Thousand! I still get a kick out of it every time some trade troll gives me the set up to link it.

Finally getting The Right Stuff on my main. It took me till Ievel 80 before I finally had enough gold, but it felt like such an accomplishment to finally be able to fly the fastest mounts you can buy.

I don't have too many achievements to be proud of as I was never one for going after them too terribly much... But if any, I would have to say Glory of the Raider (10 player), back when it was a newer achievement, before nerfs and still kind of difficult. My guild was small and pretty casual, but we wanted to do something fun and stuck to that one for a few nights. It was killing Sartharion with the three drakes up that took the longest... We'd stayed up until about 6AM or so, and when we finally downed it, it was pretty exciting.I still have people occasionally asking me how to get the Plagued Drake. :P
