I think Paladin's Tier 2 Judgment Armor (Judgement Set) looks the most awesome. No wonder people still farm it just to put it on, such a beauty. Also Tier 2 had some of the best looking armor ever (heads made into offsets in Tier 8). Needless to say this set rocks and I would love it back.
Druid Tier 5 - My only hope was getting T4 at the time I was raiding so I think it being a little out of reach made it seem all the more epic! It's the last good nature set Druids had, and the purple hues with the nature theme means it's still unique and pretty even now.
I love, love, love Warlock T8. When I was playing through WotLK, I loved Putress's outfit at the Wrathgate. Imagine my chagrin when my friend Dan got to wear it in Ulduar. I, as a Warrior, was stuck with my Sad Goat Chest that tier. Comparatively quite lame. :(
I loved the Tier 8 Druid gear... Conqueror's Nightsong Garb. It really got the nature look down. The whole set was beautiful, especially the shoulders and head. It was the most fitting gear set that I'd seen for a character at the time and it really blended in well with RP style gameplay. As far as looks go though, I'm hoping to stumble onto the druids Tier 12 soon, because if it keeps up with the style of the other tier 12 gear, then I have a feeling it's gonna look amazing.

mage - netherwind Tier 2. Just looked so cool... never got anywhere near getting it though :(
I have to admit, Dreadnaught's Battlegear Dreadnaught is my favorite. Fills me with so much nostalgia seeing it.
Avatar Raiment My favorite by far.Although i wasn't a priest at the time of the gear, i have most of it now on my current priest. It just looks so holy and amazing. The color, the wings, the hood... and the Staff of Immaculate Recovery that looks like you have a miniature priest on the end. Simply amazing
My favorite set so far has been the Bloodmage Regalia; Tier 10, for a few reasons. First off, I started to look really badass when wearing it. I mean *evil.* People *almost* forgot I was a Gnome! It was the closest I came to getting the same respect as a Human...or at least the same as a Night Elf. :) Also, the set bonuses! Two pieces gave me a 12% haste bonus when my special proc went off...meaning I could cast faster...getting more procs...thus keeping the haste bonus up... I think you get the picture. And the four piece bonus? Sheer genius! As an Arcane Mage, I'm used to popping cooldowns at the start of a fight. So I'd blow Arcane Power & Mirror Image at the start of the fight, giving me bonus damage from the Images, and a 30% bonus damage from Arcane Power. Oh and what's that Bloodmage Regalia? You want to give me an extra 18% bonus damage because I popped Mirror Image? OKAY!
I've got to say I like Shaman Tier 2. It looks like a shaman should be imo and none of the other sets truely capture the role.
I always loved the priest T3 set with the halo... *drool* Unfortunately at that time I was like.. level 5 and clueless so it was always a pipe dream.
Frostfire Regalia, because it was the first WoW related thing I ever saw, going to the old worldofwarcraft.com years ago before I had even opened an account. I was like "now that's what I wanna be when I play WoW". Never got it though, and now it's unobtainable.
I have fond memories of vanilla WoW as a hunter so I have to go with the Beastmaster set, ahh the good times.
T6 for Shaman -->http://www.wowhead.com/itemset=684. I absolutely love how it looks, and the stats were pretty good for those raids. Plus I started playing on TBC with a shaman so I like most of TBC tiers, specially T6.
My favorite was the Tier 5 Mage, because this set have all make a good set for me, as sober as powerfull and distinctive. Oh and some "Medivh"'s spices in this set :).
