PvP is too complex and your opponents will be doing everything they can to NOT do what you expect/want them to.
you can't sim PvP, that's why those who like it, like it.

simcraft (in the hands of someone who knows how to use it) can tell you the best thing to do if you can get an opponent to stand still for 3-5 minutes.
it will tell you that abilities like curse of exhaustion have no effect on your output but as someone who PvPs you know that it can save your life and
that
can have a massive effect on your output.
simcraft does exactly what it does and absolutely no more. i wouldn't say that it has no use whatsoever for a knowledgeable PvPer but i think it would be folly to try to use it to inform your PvP play without a very firm grasp of the limitations of the info simcraft gives.
(to be fair the same goes for PvEers)
from what i've seen (as something of an outsider to PvP so take this for what it is) the way to learn more about playing PvP is to read what knowledgeable people have to say, read what other classes say about your class and about their own strategies and to keep practising.
i think it's fair to say that using a PvE tool, PvE-based numbers (the haste thing), having a generally rough to poor working knowledge of the game yet thinking you know it all already and insulting people who are being far more patient and polite than you deserve is not a great way to improve your PvP...
...but what do i know. PvP's a mystery to me.

lol, you keep saying these things about simcraft but nobody reading your posts is involved in its development so i'm not sure who you expect to take exception to your comments.
also, i only imagine they would look at someone like you mocking their work with great mirth.
it is incredibly good at doing exactly what it does.
it's really terrible at modelling anything outside those very narrow parameters.
here's a free hint: AJ is to PvP as EJ is to PvE.
go and see how many people are using simulations over there.
formulation possibly has it's place but not simulation.

There is NO optimal stats for PvP. Haste is good in some situations, mastery is good in others, hell, crit might be good under some circumstances. Maybe you want to gem resil or stamina for whatever reason, who knows.
PvP is largely preferential, there is no way to say what stat is the "best".

To summarize what the homo sapiens above me is saying, for I consider him a speaker of truth:
DPS is irrelevant in PVP
.
You may deck yourself out in full pvp gear and sim your character in patchwerk style if you find it amusing. But it wont give any useful answers. If, for example, the simulation would inform you that for some reason crit is up there jousting with haste in its stat weighing for affliction, you will undoubtedly end up a very sad panda if you heed its call.

Anyways, I don't think you should presume that the greatest minds in WoW can be found here. If you want number crunching and all that, go to EJ. If you can read in-between all the math and rubble (I know I can't, guess my mind isn't great enough). AJ is more PvP oriented though.
Back on topic ... well, everything has been said already. PvP is highly situational, you CANNOT sim that stuff! BGs vs arena (which are also different depending on which combo), survivability vs moar pewpew, faster casts vs higher numbers, ... Rotation-wise as well, although I think the haunt topic a bit further down the page has a bit of info about what to cast when. Kind of. O WAIT! You posted there already, I guess you have read it then.
My own 2c about the "rotation":
- you can't stand still because melee is on you => instant cast dots, and slows ofc. Maybe even soul swap those dots onto another enemy player if you can
- You are being focused on => beware with cast time spells, try and fake cast (I'm horrible at this myself)
- Target is CC'ed => time to bring out UA and Haunt!
But as has been said by ... everyone I think? ..., the enemy will try and stop your rotation as much as they can, so just try and throw as much of your dots on the target, and Haunt when all are up. Nightfall procs should be used ofc etc. etc. A bare minimum that should remain on the target is corruption (since it heals you), if it doesn't get purged off that is. Let's hope you had time to put up UA to protect corruption from a dispel :)
Btw, I'm no expert at PvP. Being a clicker gimps me the most in that (and maybe also playing a sub-optimal comp). But I have experience and read some knowledge to expand my own.
@ Brokle: I would prefer haste over crit as demo/destro as well. Faster casts = more mobility (and less chance of interrupts) = good. But that's just me :) That's the thing about pvp, you can go either way.
