Was wondering what professions would be "Optimal" for prot warriors. Or perhaps a breakdown of each profession in terms of it's benefits?

Jewelcrafting + Blacksmithing, though it's pretty expensive to level that combination.

just my 2 copper.
I had skinning and mining on my worgen from 1-85. All my leather sold very well but only cata metals made me significant gold. When I dumped skinning for blacksmithing my crit rating went down by about 0.4%. Crit is pretty low on priority as a tank. Now i'll have the flexibilty of 2 extra sockets. doesn't seem like much but imo thats two plus the belt socket as a guarantee if the rest of your gear is missing them. Right now sockets are hard to find until raid content.
Eventually I will dump mining for jewel crafting. The added stamina from toughness could easily be made up. Now i can use the JC specific jems for whatever stats I need in those three sockets.
Now if those two proffs seem weak, you could always do engineering, enchanting inscription or alchemy. Personally i'm not impressed with them for a plate wearing tank. If you are doing progression raiding, you should have someone already doing these other professions. As far as making gold from the AH goes, the richest players on my server are jewel crafters.

I had Mining and Blacksmithing on my tank from the very beginning. Just last weekend I decided to bite the bullet and drop Mining and pick up Enchanting. Now, unfortunately I'm trading Stamina bonus for Stamina bonus here, but I also gain Strength ring enchants for my offspec.
My reasoning is that I will be burning through a lot of gear throughout this expansion, and I'd rather get Maelstrom Crystals out of the deal than vendor them for a handful of gold.
(Now I only wish I had made the enchanting switch back before I did Cataclysm Loremaster. So many quest rewards).
Cost me about 6k on AH to go from 1 to 500 enchanting, and I'm making some of that gold back from Cataclysm vellums.
The BEST professions would be Blacksmithing and Jewelcrafting. It allows the highest level of customization to all specs.

JC/BS is certainly best, especially if you're worried about both specs. if the OP is only worried about prot, then mining/JC is almost as good, and you'll end up making lots of gold instead of spending it. i would pick JC > BS because of the trinket.
now that mining is not quite as good as the other profs, i've been considering dropping it and leveling BS, but i'm not sure i can stand the thought of buying that much ore.

Thanks for all the replies. :) Decided to go with Mining/JC to start. Once I max JC I will probably drop mining and pick up enchanting.

Tailoring is always a good option. Nothing like showing up in a RandomLFD group in a full Netherweave set.
