Heh i use the standard ui but i sometimes lose mine after i get out of a vehicle like the turrets on gunship. I'm still trying to figure out what mod does this.
Anyways i'm with the people that think the standard ui is just fine.

I only know about 2 people who use the standard ui. I wonder why blizz has not updated it in forever. Maybe it's because they figure everyone uses a ui mod so there's not point,
but the ui mods are open source so they could just steal code from one, slightly revamp it, and wa-lah, better standard ui
. I'm just saying it would be nice to have one and keep the settings server side for when your comp crashes or something.
If they did that, it would pretty much piss off the UI developer community. What Blizzard usually do, is to implement a slightly simpler version of various popular UI addons. Just look at patch 4.0.1, and you'll see that they are adding a basic version of PowerAuras.

Each element of a UI should be the only element fulfilling a particular purpose. For instance, an enemy cast should be represented by only one cast bar on the screen. The default UI generally got this aspect of UI design correct. The enemy's cast bar should be located in exactly the one place you need to see it (for interrupts and such). A player health frame is redundant if you're using a HUD, and depending on how you configure the HUD a target/focus frame may be redundant too. The only exception I can think of is name plates; name plates facilitate click targeting, though it would be nice if a name plate would disappear when it's targeted.
Buffs are another item I constantly see duplicated on UIs. Whether you prefer an icon or bar as a representation of your buffs, that representation should only appear once and only in the exact place that makes it easy to see. I also like to see when priests have an attack power buff displayed; filter that #$%^ out! It's completely unnecessary and is taking up screen real estate. This is something the default UI does get wrong.
Lots of people like scrolling battle text add-ons. More power to you. Save yourself some clutter and configure the damn things though! If your battle text shows every little energy/rep/experience gain, then you're doing it wrong.
There's a little thing called unity that I've seen discussed. Pick a bar texture (two tops) and use it throughout. Recount, Omen, Skada, and every unit frame mod that I can think of all support custom textures. Pick one and apply it to your add-ons. The same goes for fonts. One legible font is best, but two can be managed. Three or more and you're doing it wrong. I say "wrong" because the result is not visually appealing. Blizzard got this right as well.
To sum it all up, a UI should be a) visually appealing b) functional and c) efficient. Blizzard didn't do too horribly when they designed the default UI, but it certainly leaves a lot to be desired. Plugging my own UI here, but the link is in the signature.

Hunter: Bartender
Warrior: Bartender
Resto Shaman: Plain UI + Grid + Mouse-over macros (I can't imagine raid-healing without something like Grid O.o)
Resto Druid: Plain UI + Grid
Rogue: Plain UI
I think the standard UI works fine. Heck, I've seen level 80's with only the beginning action bars, not the additional ones on the right of the screen. But I am sure if they knew about them, they would use them.

Her healing improved dramatically, lower overheal, nearly 100% earth shield uptime on the tanks, instant dispels on people who needed them, and no more overwriting the riptide HoT. All because she didn't have to peer at convoluted health bars to get a good idea of what to cast and where. For dps and tanks it's perhaps less so, but for a healer a good unit frames addon makes a HUGE difference.
All that information is already available in-game, so I have no problem with it.

I use mostly standard Ui, but, then again, I'm a DPSer, so it might not affect me as much as it would to a healer.
I've tried several UI combinations in the past, and found out that, while the learning curve isn't that big, having to get used to a whole different UI at once lowers my DPS and makes me underperform when I less want to. Now that Expansion's ending and there's not many new things to do, I might give it another try.
About, why does Blizzard not change the UI, I think people already answered the question there. Healers use it one way. Tanks use it the other. DPS a third way. Raiders like it one way, PvPers like it the other. Even people in the same class and spec might like to have their stuff arranged differently. The answer is then: Because it is standard.
Yes, It's not so neatly-organized ("however in narf do you use all that buttons?" I've heard from non WoW-Players "I couldn't pay attention to that much stuff at once")... And yes, it doesn't have stuff that most of us would like to take for granted. Some of it's been slowly implemented -if well not as fast as we'd like-, but I'm gathering creating a very-flexible UI that could be arranged/customized at will would be too much of a pain-in-the-
