Along this vein I always wondered why tailors were not the only ones able to "skin/mine" a corpse for cloth.
But a skinner can get wool cloth :D

the thing about cloth drops is that everyone can use cloth for a profession (first aid).

Some of these people are the types I would avoid when finding a heroic group =/

I just roll greed on everything I want to DE and after the instance is over I go to the bank and disenchant all the stuff that I won. I don't like to play the whole "let's roll for enchants" game, so I just don't mention the fact that I want to disenchant everything.
Does this make me greedy and selfish? Perhaps, but my professions are my business and if I win an item on a greed roll what I do with it is my business.
I realize the OP is talking about having the enchanter Need on an item to DE it, but the fact of the matter is he shouldn't feel obligated to do so. Consider the amount of money/time farming the enchanter invested to be able to disenchant high level items. Also, consider that more often than not you will be able to sell a shard on the AH for much more than you would be able to sell a blue item to a vendor. Does the enchant get any compensation for disenchanting items, thereby increasing your profit margin? No. By rolling on shards, the enchanter is essential giving the lucky winner extra money. I believe that it is this fact that is so irksome to the OP. But hey, like several others have also said - just don't roll for shards.
Also, it helps to disenchant everything after the instance is over - people get @#$%y when they see you aren't letting them roll on the disenchants.
That is a strange way to do business hiding the fact you are an enchanter..

I dunno. I have seen a few (not many) people argue that when an enchanter gets an item upgrade and disenchants his old item, that they should roll for the shard he just got.
I mostly ignore those kinda people, but I have seen it happen
That's the only attitude to take, but in this case, you aren't forced to DE stuff, its just nice that you do, you don't lose nothing by doing it, 5 guys rolling for a random blue (worth 5g at vendor) < 5 guys rolling at shard worth 20g, everybody wins.
I once did a pug with a lock that was the designated DE'er, he won the 35agi on 2h formula, I went to the AH buy the mats and he made me the enchant. he got a tip, I got my enchant. Win win.

Why would I advertise my tradeskills in an instance anyways? If I have enchants to sell, I use the trade channel.

Save all the shards till the end and do one roll after you kill the final boss. Top rolls get shards.
That's what I tend to do with guild, but with PuGs people come and go (or can do), so it's best to do the rolls one by one.
It's an excellent motivation for people to stay the whole instance though.

Noob that item may have beened DEed but everyone in that 5 man group played there part to get there. They dezerve a fair share of the loot no matter what and since no one wanted the blue it was decided as a group that it would be sharded and rolled on...so there for EVERY one gets to roll on it not just you,
Since when did everybody in your imaginary group get together and decide to roll on shards? Sure, everybody works together to down the boss, but doesn't that boss drop loot? Doesn't everybody get a chance to roll on that loot? So why is it a problem if the enchanter wins it and disenchants it? Once he wins the greed roll, he can do whatever he wants with it - equip it, vendor it, or DE it.
Now, something you may not now about the enchanting profession is that as a low level enchanter, you are hard pressed to make any money through your profession at all. Realistically, there are two routes one can take to level enchanting 1) spend weeks or even months farming for green and blue items to disenchant to acquire the necessary materials or 2) spend several hundred gold to accomplish the same thing in a short time via the auction house.
What right to do you have to fruits of an enchanters time and effort? Does he owe you something that you feel justified to
demand
that you be allowed to reap the benefits of his labor? Perhaps if you provided him with the 400 gold (or more) required to level his enchanting skill to a respectable level you would be forgiven for wanting his shards. Otherwise, you have no business even asking to be allowed to roll on shards. I will reiterate this point because it's important -
everybody gets to roll on the loot
.
Don't try to twist my words and claim that I am advocating that everybody become selfish and uncharitable (although I know you or somebody else will). Can you imagine how boring and lonely the World (of Warcraft) would be if everybody was only concerned with "number one"? It would be like Guild Wars (can you feel the burn, ANet?). What I want is for people to stop thinking that anybody is obligated to help them. Why should I, as a level 70, be forced to help anybody and everybody who wants gold, a run through an instance, etc? Why should I, as an enchanter, be forced to roll twice to get my shards? I don't mind helping, and I don't mind sharing, but when somebody commands me to assist them and becomes belligerent when I refuse... well, I don't like it.
bmsweeney, you may think I am a noob, but I
know
that you are a child.
