I have a guild member who is gold capped on one of her chars and quite wealthy on another, she is a rogue with crappy professions and "decent" gear nothing more than heroics tho. She simply ran Stratholme repeatedly it averages out about 500g a run at least each run and she was only grinding for the mount there and ended up retaining a great amount of gold. Black pristine diamonds go for about 115g a peice and can drop quite rapidly there as well as runecloth which is always a great sale! She does not manipulate the AH and never has really played on it much, mainly storing most things and selling what she can the first time around, so I tried this myself and managed to get my epic flying mount from nil gold to the 5k in about 5 days and it wasn't a constant grind cause I have no attention span :P

Outland is a great place to make gold. Hardly anyone goes there anymore, and when they level new toons, they get the heck out of there as fast as possible.
Any crafting material you can get your mitts on will sell well; herbs, leathers, ore, meats and fish.
The prices for Outland mats are greater than the prices for the finished products. Don't waste your time getting herbs turned into pots, the bottom has fallen out of the Alchemy market. You want to supply the people who are levelling up professions.
As far as fishing, the mats for Fish Feasts are still selling well. You can either traipse across Northrend to look for the pools, or fish in Wintergrasp where all the required fish can be caught.
All of my comments and those above notwithstanding, if you want to gold cap, you will have to pickup a crafting profession, or learn the fine art of reselling.
