Make sure you have your shield stacked to 3 all the time, when you first start a duel with the NPCs dont move, they run out when they start doing this get ready to charge them, and throw a quick shield bash at them then melee them. Repeat until they surrender, I do the same thing to solo the commanders easy stuff.

Here's a tip: hug the enemy when you need to recharge your shield or are waiting for a cooldown to finish. Both the Shield Throw and the Charge abilities require some range to use.

A really basic (and somewhat longer) way is to simply keep your shields up at max, when they run away to get distance charge them, and simply circle strafe them while hitting them with the melee poke attack.
If you want to get complex, you can circle strafe and then swing it wide to get a free shield breaker or charge in.
Otherwise, shields at max, and charge when they move to a distance.

1) equip your lance
2) get on your jousting mount
3) charge shields three times
4) start the joust (make sure your shields are fully charged first)
5) charge before the enemy gets set up... as soon as the fight starts they will ride away from you. As soon as you have enough range, charge!
6) be quick, turn your mount after you hit them. I try to steer off at about 45 degrees from the target, get a few feet away, then jump and spin my mouse-look so I'm facing the other way when I land. (if you can't handle the jump&turn, try to make a wide arc.)
7) throw your spear. I think it's called shield-breaking.
8) close to melee, hit them with the basic attack
9) keep hitting them as long as they're in melee.
10) when they run off, wait until they are in range, then charge.
11) rinse and repeat...
This is exactly how you joust. By only charging/spearing them when they run from you, they will have few opportunities to knock very shields off of you. The melee strike is quite powerful when all their shields are gone. Melee attacks to you won't do anything with your shield on. Using this method of jousting, its possible to solo the commanders as long as you don't get too many adds.
After, you charge, use the right-click mouse turn function to do a 180 jumping spin into a spearing chuck while closing the gap, so they can't charge or spear chuck! Very pro!

A key skill is the jump-turn. As you're moving away from them, jump, and spin yourself in the air. You'll keep going in the direction you were moving when you jump, but you'll start moving in the direction you're facing when you land. This lets you get the distance for a shield breaker or charge and still get back into the battle very quickly.
What I do:
1. Charge shields to full.
2. Start battle.
3. Back up slightly as soon as battle starts until shield breaker can be tossed (I'm hammering the shield breaker button)
4. Charge
5. Jump-turn
6. Shield breaker.
At this point they'll usually countercharge you, but they'll have either red or no shields, and you'll have yellow or red shields. As long as they're close to me, I hit the regular attack button at the same time I'm hitting the shield button until I've got full shields. As soon as they move away, I do the following:
1. Shield breaker
2. Charge
3. Jump-turn
4. Shield breaker
This keeps their shields either low or off entirely for almost the entire fight. You'll take more damage, but the fight is over very quickly this way.

Stay in melee range all the time and just dart out quickly to shield breaker or charge. Just spam the button for shield breaker as you run sideways away and as soon as you see the cooldown for it start again (not the projectile) then get back into melee range.
I've used this strategy to win with even 1000ms latency. If you never work in charges and you're always right on top of them, you can usually win without ever losing a single shield. Though charging when they have 1 or less shields left speeds things up a great deal, but getting distance for charging is the only risky thing you've got to do. However, if you only charge right before they do when they're still running away (so their back is facing you) you don't risk anything.
