Hundreds of thousands of people seem to use SpartanUI, but that's only because it attempts to be everything you need right out of the box. The fact of the matter though is that it ISN'T everything you need right out of the box. You have to add things like Omen/Recount/Skada, Grid/VuhDo, etc. Once you do, then all the sudden your UI takes up 2/3 of your screen. You're better off putting one together and configuring everything yourself.
Ask yourself why you'd even install SpartanUI to begin with. Sure it
looks
okay at first, but the point of a custom UI is to both look good
and
make you a better player. Read through the "Post Your UI" thread to get some ideas and then put some time into something that truly is your own and works for you. Tinker with it. Try substituting add-ons here and there. You'll be very pleased with the results if you keep posting incremental updates in the UI thread and using a critical ear to consider suggestions.
All that said, try the UI in my sig. =D

Just use your own judgment and don't slip into mob mentality. Hundreds of thousands of people use SpartanUI. In their eyes, it's good. In my eyes, it stinks. I certainly encourage you to try it, but remember to be critical. If it solves all your problems and makes you a better player, then good! Still, you should try something else as a comparison. You can get all kinds of prepackaged UIs from Wow-interface.com and Curse.com, so try a few.
It all comes down to personal taste. I've seen some UIs that I would dub as absolutely horrid, but the designer tried other things and settled on what he was using. Who am I to judge after that?

IMO SpartanUI isn't worth it. I use it for some alts who have simple UIs (Mage, Warrior for the moment), but my main (pally) SpartanUI isn't nearly enough that I need, and its screen real estate is atrocious. Plus, the real killer is the lack of a GUI to manipulate the thing; you have to use command line bullcrap of the format:
/sui <command> <args>
Really, in my opinion if you would use the basic WoW interface plus a few other things (Omen, recount, etc) then SpartanUI is worth using because it's an improvement over the basic. If you would customize your UI, and if you were going to use Shadowed Unit Frames you would be, then skip SpartanUI. Get Sunni Viewport, Bartender, Sexy Map (or equivalent) and create your own UI that does exactly what you need, and customize it to best suit your playing style.

Arkayn who are you to act all serious and mature, huh? :D
But as you mention, people will look down on parts of your UI - I for certain would smash bricks into it - but you can't let that stop you. Most people gives suggestions and a reason behind their thoughts. I've never used another player's UI, but surely I've used elements from them. Because they were what I needed and pleased my taste.
As Arkayn did mention, WoWI and Curse do have loads of premade ones. There's no need to install them all, watch the screenshots of 'em and lift out the mods you like.
