It will certainly make things easier but you should collect enough money from quests and selling dropped loot to buy training and most mounts.

As a tank, 123 (I think that is the total bonus max) bonus stamina is pretty nice.
As a DPS, more attack power/strength is also, dang nice.
Can you manage without professions, yes, are you gimping yourself and telling the world you are lazy, also yes.

Naaah, skip them. The bonus for dps is... about 50-100 dps MAX. That is, with jc and bs or so. Leveling professions as a dk is one hell of a job and id skip it too.You may want to have them ready for cata tho.

I'd say that DKs have it easy compared to other classes. Sure you *think* its harder, but you'll blow through all the early skill levels since we can get On a Pale Horse and we already have our epic land mount.

I disagree. Matter of fact, I think Death Knights have it HARDER simply because you don't have as much time to learn individual mechanics of a class compared to the others (25 levels vs a full 80).

On-topic: Is it necessary to level professions? Absolutely not. Questing alone should net you enough money to get at least basic flying and Cold Weather Flying at 77. You'll need to grind on quests well beyond at level 80 however to get the 5K necessary for epic flying, and the 1K for dual spec if you care.
Personally on my DK I just leveled mining & herbalism along the way so that by the time I got to 80 I swapped them out for Blacksmithing and Alchemy and had the mats already, with extra money to spare thanks to the items sold on the AH. You can certainly get by not doing this, but it'll make things a lot easier for you trying to manage upgrades if you do it yourself (or have someone in-guild you can do it for you).

For my DK I have blacksmithing and enchanting. BS is great because I could make my own ToC and ICC parts which were just as good as raid drops and of course the extra sockets are a really nice perk. Enchanting is not that awsome for outright dps improvement but for tanking the stamina on your rings will be welcome. Also having enchanting means you can just D/E the stuff you make while leveling your blacksmithing. I would say JC is a no brainer because the special gems are another must have perk.
