If the warrior can put out the damage, it can be pretty faceroll. However, you have to be able to protect yourself and him, meaning you have to be durable too. You won't survive against mage+rogue or rogue+priest teams in PvE gear, and resto druid comps are about who can survive the best.
It's only faceroll to 1800 as a holy paladin if you have the gear+skill. Holydins lack a LOT of tools other healers have, so they make up for it in durability.

Int works better if you have gear. DP is your only source of mana, and most matches you can't stop and drink without endangering your partner's life.
Also, keep in mind, high rated holydins are geared for 3's/5's, meaning they have to be able to keep up bigger heals for longer.

This would be better, and you can achieve this with a weekend of grinding. Save your Frost emblems for
Purified Lunar Dust
and you'll be in business.
I would recommend replacing your deadly and then furious gear asap. You can grind
Protector of Frigid Souls
out quickly as well for another slight upgrade.
After the pvp upgrades, the trinket will put you at 2900 passive sp(according to profiler), which isn't bad. You should be able to make 1800 with that gear and some skill.

The gemming will differ from comp to comp - for example, a paladin in a beastcleave is very different from a paladin in a double healer. If you want to figure out your gemming, figure out what your comp does... in 2s as paladin/warrior your main goal will be to kill someone in a HoJ switch, so the paladin will need to assist the warrior, so I would highly recommend gemming SP.
