Uh... have default nameplates displayed. You display nameplates by pressing V. If they glow red, you have aggro. If they glow orange, you are about to lose aggro. If they are yellow, you are about to over-aggro something. If they do not glow, you need to taunt it.
Get used to nameplate glows, or download some kind of a nameplate addon. I just run with the default nameplates... its not the perfect solution, but i have been tanking with it for a year and a half, and so far so good.
Also, you will find out that targetting monsters by clicking on their nameplates is much better than trying to click their ingame models. Gone will be all the trouble with things like "this small monster is standing inside this large monster and i can not target it", and other similar issues.
As far as i know, there is no way to target something that targets someone through clicking at that someone.
You will get used to it... id love to make a video where people could see what i do with those little skeletons that get summoned in Culling of Stratholme by the minor trash necromancers. They run to the healer... click taunt click deathgrip, healer doesnt get hit... and it all took me like 2 seconds. Once in naxx i was able to target and taunt two of those large spiders mid jump, while turning around, and throwing Death and Decay under my feet.
edit: Actually, wait. Now that i tried it, 2 seconds are an awful lot of time. 1 second max.

If you want to be able to see the mob that got loose, Threat Plates is a pretty good addon. It is an extra to Clean Plates, and it allows you to see more information from the nameplates above the enemies. When you've got the aggro on them, it shows their plate in green and smaller, and if one peels off it gets red and large / attention-grabbing, so you can just click and taunt.
However, most taunts will automatically target the mob that is attacking your target if your target is friendly. Meaning, if your grid shows the priest is pulling aggro, you should be able to click the priest and taunt, and the taunt will be redirected to the mob that is targeting them. This only works, of course, if there is only one mob targeting the priest, if theres more than one mob then you'll only peel one off of them and the priest is still in danger.

No. It does not work like this. Maybe the paladins taunt that taunts 3 targets, but not Hand of Reckoning, and not any other taunt.

Maybe ? Dont know for sure. But yes, the easiest way(what i do) is use a mouseover taunt macro:
/cast taunt. And use the name plates.

Try tauntmaster, it shows your party/raids healthpools like grid and they glow orange when they start to pull aggro, red when they have it, all you have to do is click and you'll either dg or taunt the enemy with the most aggro on them.

Did a bit of testing this morning and it does appear that it taunts whoever the person has aggro is targetting, so in massive aoe settings it might not taunt the right person. But its still pretty handy, especially in 5 mans.

you can do a taunt macro however let's say a mage is aoeing the crap out of the group and a mob get's loose. the mob coming for the mage isn't necessarily his target since he's doing equal dmg to all mobs. it's just whichever the tank had the least amount of threat on. in the situation of say a paly or maybe a hunter a targettarget macro would work.
the problem with using that kind of macro is the risk of taunting the wrong mob and using up a taunt you may need.

I use this macro to allow mouseover taunting. I also have one for death grip and strangulate. I am thinking of doing one for mind freeze as well, but the strangulate one has done well enough.

You're right, the last time I did any testing with taunts and taunting macros was when leveling my paladin, so I must have been confusing
Righteous Defense
(which works the same whether you target the mob or the party member).
IIRC, the targettarget type macros never worked as well as I'd have liked, so I just got used to relying on the Threat Plates unit frames and just taunting the loose mob. I always thought it allowed me to react faster than finding my party member's unit frame and clicking that. Even when tanking on my paladin, I prefer to target the mob with Righteous Defense directly rather than clicking the party member frame, slows me down.
