Many priests have holy & disc builds for the flexibility it brings to the raid.
However: those of us with shadow offspecs probably have them because healing burnout is a real thing. Even if you love healing with a passion, it does help to be able to change it up once in a while.
And having a dps offspec is actually very useful for a healer. Being able to swap from 3 to 2 healers in a 10-man, or 6 to 5 (or 4) healers in a 25-man is sometimes exactly what it takes to get an encounter down.

The way I look at it, once you are leveled, why would I ever need shadow?
It's nice to only be responsible for 1 person. When I tank or heal too much, I need a break.

Real men have a PvP holy offspec.
(But really, ordinarily I would have a disc main spec with a shadow off spec for the role versatility. Holy/Disc can both do roughly the same job in 10 mans and 25 mans, while a holy off spec isn't going to help if you need DPS. However, I despise holy healing for the most part, and my shadow gear is horribly outdated, so I'm currently going with my disc healing spec and my PvP disc spec and just saying screw shadow.)

You can do it reasonably well but not perfectly.
Holy wants haste and has not that much use for crit. For shield spamming haste is pretty bad.
What really works well together is a holy and a shadow spec. You can go spirit/haste on all pieces which is perfect for holy and while it is not perfect for shadow it still does pretty well (crit/haste would only be a small advantage and is not really significant).

Disc/Shadow works just as well, since tank healing disc users value Crit+Haste pieces over those with spirit, just as shadow does.

The way I look at it, once you are leveled, why would I ever need shadow? I'm never going to que in 5-mans as shadow...the que for DPS is 12 min longer than a healer.
Meh, I queue as a healing but use my shadow spec. As long as you have decent gear and are not a complete moron, you'll be fine. PW:S + VE is enough for the vast majority of fights, and when s*** hits the fan, I just pop of Shadowform and throw out FH, Renew, or PoH as the situation dictates. As a result I usually top the dps charts and act as a healing simultaneously.
On the rare occasion I get HoR, I simply respec...or just leave since I don't care a whole lot for heroics on my priest anyways.

I used a Holy Fire / Smite spec for 5 mans next to my Disc main spec.
A shield and pre pom / renew on tank and spam Holy Fire + Smite and cast shadowfiend on the boss.
If its a bad tank u still have more than enough healing powers.
If needed refresh PoM / Renew or Shield and if AoE just a CoH should do the trick.
Glyphed Holy Nova for the AoE Holy Nova Spam on mass pulls.
Disadvantage u need quite some mana regen/pool.
This was before i decided to try out some pvp so me spec.
