Generally, the gathering professions will make you money while the crafting professions will cost you money (except maybe JC and Ench).
You are kidding. Im leveling JC right now. IT COSTS.
Anyway...
It really all comes down to what your goal is.
If your looking to make money, the gathering professions will help you get a steady flow - if you go out and look for them. The crafting professions will tend to cost you money most of the time - ESPECIALLY in the leveling up. At top level you may be able to make some cash selling your ability to make stuff.
If your looking for professions that have some raid utility, ususally thats either a gathering (gather up Skins, Mech-corpses, Herbs and Herb-corpses, and Mine-corpses for guild pocket), Enchanting (someone always needs an enchant on their new gear, sometimes when they JUST won it, and there is also the option of DE'ing loot no-one wants), maybe Jewelcrafting (same first reason as enchanting. Imagine winning gear and your guildmates hand you a gem and enchant. Boom, instant upgrade!), and rarely Engineering (
Jumpstart! *ZZZAAAAAAP!*
).
If your looking at bonuses you must
check each one
.
Blacksmithing gets the extra gem sockets on Hands and Wrists.
Herbalism gets Lifeblood (self-triggered small HoT, which can sometimes be of help).
Skinning gets Master of Anatomy (extra Crit).
Miners get Toughness (extra Stam).
Alchemists have unique potions as well as Mixology (boosts potion effects/length).
Enchanters can do ring enchants for themselves only.
Jewelcrafters get special trinkets as well as up to 3 Dragon's Eyes (gems with about 1.6x the stats of normal epic gems).
Inscribers get unique higher-powered shoulder enchants.
Leatherworkers get Fur Linings which are usually better than the enchants for that item (or better than the ones the enchant items they make other players).
Tailors get Embroidery (unique cloak-based proc enchants)
Engineers have the most fun, and get a variety of fun and sometimes usefull devices.
If your looking for Min/Max purposes... for tanks the Min/Max roles would have to be Blacksmithing and Jewelcrafting. As a blacksmith you get 2 extra sockets on Hands/Wrists, and as Jewelcrafter you get access to the 3 Dragon's Eye gems.
Personally, my Warrior always ran Skinning/Herbalism. That was until just recently when I decided to dump Herbalism for something that would give me a tad more use (when your starting to take 50K hits at a time, a 6K HoT isnt exactly going to do much. And I was too lazy to go out and find herbs.) I picked up Jewelcrafting instead, looking forward to an extra 60 stam from Dragon's Eyes.
Chose to keep Skinning because I like the small bit extra crit, and I am half-decent at farming for skins.
EDIT: Forgot to mention this part. You also have to decide if you want a Gathering and Crafting Profession that work with each other. This can help keep costs down or profits up. It also allows crafting professions to turn a profit.
Mining and Blacksmithing - Can mine up metal, and turn it into useful metallic goods.
Mining and Jewelcrafting - Can mine up ores, and prospect it for Gems.
Mining and Engineering - Can mine up metals, and turn it into the most useless items :D
Skinning and Leathering - Skin the creature, turn it into something nice.
Herbalism and Alchemy - Pick up the herbs, and make potions from them
Herbalism and Inscribing - Pick up the herbs, and make inks from them

No he isn't kidding. My jewelcrafting nets me a 2k gold profit every day, plus another daily 2k from inscription.
Yes it costs an awful lot to level up. But it's very rewarding in the end.
On topic, I'd recommend Blacksmithing/JC with JC/Mining close second as far as stats are concerned. Smith/JC's superiority is its flexibility, you can always switch those extra gems in your blacksmith sockets if needed whereas as a miner you're stuck forever with
30

If you plan on exclusively tanking, JC doesn't really provide any extra stats. Well it gives 3 more stamina than mining, which is quite laughable. What JC provides is more flexibility, that is if you decide to offspec DPS for a night, or your guild asks you to DPS on a certain fight, you'll be able to get 3 JC-only DPS gems instead of 60 stam from mining.
But if the only thing you'll ever do is tanking, you can stick with mining.
Here's a little breakdown just because I want to:
Jewelcrafting
: 3x51 stamina gems, a 21 stamina per gem increase over regular epics, a 63 stamina increase overall, offers flexibility
Mining
: Straight 60 stamina increase at max rank
Blacksmithing
: 2 extra sockets that you can socket with 2 bonus 30 stamina gems for a total of 60 stamina, offers flexibility
Leatherworking
: 102 stamina enchant for bracers, a 62 increase over regular 40 stamina enchant, offers flexibility
As you can see bonuses from all professions offer around 60 stamina, the differences are frankly negligible and if you only plan on tanking you can't do wrong by keeping Mining.
Money wise JC/Mining is a better pick than Smith/Mining.

Engineering for the agility on cloak enchant and armor on the hands enchant.
the armor to gloves is uber, but the agility to cloak is inferior to the standard armor enchant.
