You can only have one at a time.
While the Spellstone provides haste, which is preferred over crit rating (Firestone), the %-damage increase is the more important half of the effect:
Are you specced into Affliction? Use Spellstone (1% DoT damage).
Destruction? Firestone (1% direct damage).

From what I understand, Firestone's only that great on nicely geared Destro locks. If you are not that, Spellstone is still the way to go.

Thanks I knew you would have the answer. Would you like to critique my spec and give me pointers on what changes to make too? I spec demo and its not anywhere close to what you recommend but its really good. :)

i smell a faint whiff off passive aggressive sarcasm but perhaps that's just the internet making a cynic of me. either way, there can be no critique without an object of the critical assessment. if you do want opinions on your spec then you'll probably want to post it.
without looking at it what i can say is that if it really does differ greatly from any of the PvE specs in the FAQ then i can say with some considerable confidence that you are not meeting your character's potential. if that is at all important to you or your raid team then you should probably rethink your speccing strategy.

Yeah i was mostly joking, but if you'd like to know its a demo spec with the extra points in affliction. Makes me pretty much invincible during questing. I'm almost lvl 80 though and understand I need to switch when i start raiding so I'll be going to the recommended spec for demo at that time.

sounds like you're doing exactly what is suggested in the FAQ then:
Kappajoe's levelling guide
has all the information you need to get you into northrend. At level 71 I would suggest trying
this build
(21/41/0) as it provides the speed of affliction with the safety of demonology. It can chain pull large groups and can solo almost any elite quest in northrend. As you level past 71 put your points into affliction, choosing anything that will increase your DoT damage.
levelling != end-game
honestly, nobody cares how you spec when levelling.

lol. i just mean that it doesn't generally effect others so whatever you enjoy is all good. once you join a raid group you have a responsibility to the others to achieve your potential.

at 75 without a bother) and have zero downtime.
Edit: Oh, and chain pull/AOE is a breeze.

you're an idiot.
firstly 1% is what they budget for a single talent point. are you advising, don't bother with talents?
they provide combat ratings as well as percentage bonuses.
oils don't work on weapons with an item level that is over a level 70 weapon.
the bonus from stones is a bonus. turn your nose up at it if you want but you're a fool to do so.

I personally don't like neither since I see nothing happening that 1% doesn't make a difference to the training dummies in Org, I still pump out the same dps as a dest and afflic now if the spell stone had a more useful 2-5% damage on periodic damage or something useful then it would be better your best bet is just to buy oil for your weapon and socket haste/crit gems.
I guess us Demo locks can laugh at your oils (which as asakawa already pointed out don't even work) with our
