I'm personally not that big a fan of Herbalism on a Shaman, mainly just because we don't get as much out of Lifeblood as other classes. We're perfectly able to heal ourselves, and we don't have some of the mechanics that make it difficult for other hybrids (Shadowform, Druid forms; I have Herbalism on a lowbie Feral Druid, and for her being able to heal in-form is a godsend).
Similar reason I don't see Alchemy being all that great. Once you have Water Shield at 20, you pretty much have infinite mana, and again, healing is easy. Potions aren't something that I think you'll need many of while leveling a shaman.
Leatherworking probably has the most to offer for leveling, giving you some very solid gear to craft, easy access to the great Stamina-boosting armor kits (and before you get to BC content, the much crappier Armor-boosting armor kits), and Fur Lining is a fantastic boost while leveling. Tailoring is also a solid choice for either Ele or Resto, but if you're leveling Enh you won't get much more than bags out of it.
For the absolute best results in end game, though, you're best bet is probably Jewelcrafting and Blacksmithing. But as Blacksmithing will have very little to offer you while you're leveling, I'd recommend holding off on leveling that until you hit 80. Plus, leveling two Mining professions without Mining would probably require pretty deep pockets. For that reason, I'd say you're best bet is to go Jewelcrafting/Mining while leveling, then using Mining to farm the mats to powerlevel Blacksmithing when you're a high enough level to get the extra sockets.
