The other thing you must consider is, besides res, pvp usually have stats tailored for pvp ( crit for melee plate, haste for casters, etc.... )
In that particular haste, the pvp helm would be a lot than the PvE helm since haste is a mediocre stat for ret pvp.
But let's take a look at this
ring
Perfect stats for pvp: high strenght ( a stats you can't find on ret pvp off set ), high stam, hit and crit.
I would take that ring over any pvp ring any time.

Everything is better than deadly now, it's from 2 seasons ago. Furious and relentless pieces should be kept though. You hear people saying 1k resilience a lot, so, no, 700 resilience isn't the magic number although people say 600 resilience is where you can tell that your resilience is actually working.

For a plate wearer I would probably say 700-800 is fine...for any cloth wearer you would really want 1k+ resil though. Although I may be wrong, just from what I have seen from a lot of the high end pvpers on my realm.

Now, I am not a good pvp'er, nor am I experienced with high-rated arena matches. What I can say though, is that you generally want as much resilience as you could get.
This is not exactly true.
Of course, Resillience is a key stat to pvp and I don't think you can have success in pvp without at least 500 res but there's a lot of factors that can affect how much res you want:
- Wich class you play: Some classes have depends a lot more on resillience. Rogues and mages relies on evasise habilities to survive. If they are stuck in a dangerous position, they'll die, not matter what is their resillience. This is not true for classes who need to "tank" damage regularly, mostly healers. It's for those guys that res will shine.
- Wich bracket are you playing in: 3v3 depends a lot more on resillience since you can easily die if 2 determined dps decides they want you dead.
- Wich comp are you playing: Some comp relies on a specific gearing. A good example is turtlewarrior where the warrior needs a gear mostly based on top of the line PvE gear.
- General experience: As you got more experienced with arenas, you start seeing some issues: "I die too fast" "I can't kill healers" Those issues can be resolved by tweaking your gear wich can affect your resillience.
