You already have a miner, so either Skin/LW, or if you don't want to be a skinner, I'd do a double-crafting like JC/Enchant or JC/Alchemy.

i'd say BS/JC hands down, this combo will be the best or at least 2nd best for min/maxing any spec and more importantly it's as flexible as the druid class meaning even if you change specs completely altering your playstyle and gear needs JC/BS can offer just as much benefit

I would say: LW and Tailoring..
LW:
becouse u get 76 SP on bracers or 102 stamina
Cheap to make Stam or AP Legg enchant on your self
Tailoring:
becouse u get chanse to get 295 SP on cloak.
chanse to restore 400 mana on cloak.
chanse to increase AP by 400 on cloak.
Cheap to make SP legg enchant on your self
i know its not the cheapest option.. and realy no chanse of farming. but there is always alts todo that with.. =)

Gathering professions if you need gold. If you don't then don't take gathering professions.
Which crafting profession you chose does not really matter. Every single crafting profession does have a bonus (~46 SP, ~80 AP, ~60 STA). There are minor differences but those are so small (e.g. 62 STA instead of 60 STA or 40 AGIL instead of 80 AP) that they really do not matter at all. You will also not need any crafted items when leveling. Quest items generally are superior and even if you lack a good quest reward the time and effort needed to craft your own gear is not worth the minor difference. You are better off just leveling faster and getting more quest rewards then crafting things.
Long story short: Forget about LW as profession for leveling. It won't do you any good.
However, each crafting profession does have additional gimmicky features which make them attractive:
Inscription gives you a shoulder enchant at 80. The only other way to get that is to grind exalted rep with the Sons of Hodir. This rep grind is incredibly long and annoying and by chosing Inscription you can skip it completely.
Enchanting gives the possibility to disenchant your own gear after you used it. You can also disenchant drops in herocs which you will run a lot at 80. It is a very nice and useful profession to have for that reason alone.
Blacksmithing will give you lockpicks. Never ever rely on a Rogue again to open your locks. You can also run through old content (classic dungeons) without having the required keys, all locks there can be picked. Very nice if you want to get some of the classic achievements. Blacksmithing also has the most flexible profession bonus, you can chose any stat you want while other professions usually are limited to AP.
Jewelcrafting is also very flexible, just as for BS any stat can be chosen as profession bonus. Still, the difference to other professions is extremely minor and hardly worth picking JC for.
Tailoring provides cheap spellcaster leg enchants which will save you some money in case you go balance or resto. It also has nice tailor-only flying mounts but for Druids with (Swift) Flight Form those won't really be used much.
Engineering has also engineer-only flying mounts but as the tailoring one a Druid won't use them often. Engineering also has
awesome
gimmicks pike a parachute or rocket boots and generally cool and innovative profession bonuses. It's hard to say if they are better or worse then others ... engineering just is a bit special, a bit different.
I personally have JC and BS. BS is awesome for the lockpicks and that's the reason I'll never drop it. Right now I'm thinking about dropping JC for Eng since I really want all those cool gimmicks. I'd recommend starting out with Eng, it's really the by far most fun profession, and chosing enchanting as second (for the ability to disenchant things).
