you have to be lvl 80 for the tokens that says "requires level 80", but there's also the same kind of tokens at lvl 70.

Yes, it does. You have to
redeem
the item from the NPC in Booty Bay by using the code you have got from a card or wherever. Thus it's called redemption.

Well, it isn't a very common term and I don't see people using it a lot. This is the first time I've heard someone referring to buying armor with tokens as redemption, and the paladin spell is generally just called "rez" just like the priest, shaman and druid equivalents. The novelty item codes aren't a very common subject of discussion either.
But if there's some common term that you might be confused with, it's SS. In WoW speech alone it might refer to:
* soulstone
* Sinister Strike
* Shield Slam
* Southshore
* screenshot
