Alchemy is more for the convenience. You get longer flasks, or even the Flask of the North if you don't want to blow money on real ones. I'll never call it bad, but it loses in the pure numbers department. I consider those numbers marginal, but I've never been a min/max-er.

Two crafting professions work well period, as long as you have either the income to waste buying the mats you need, or you have gathering alts.
The main reason people choose JC/BS for minmaxxing benefit is two extra slots + JC only gems. Correct me if I'm wrong, but the only benefit you get from Alchemy is extra length on flasks (I'm less sure on this) and procs for extra potions, making your raiding experience cheaper. I don't think Alchemy will help increase your dps anymore than not having it like BS's extra gem slots would.

I think overall, BC maxes your DPS while Alchemy will make raiding more affordable.

Oh, there you go. Not sure if that is enough to offset the extra gem slots though. As far as I'm aware, JC/BS is still the pairing of choice for min/maxers. I'll assume they've done the math on it.
I myself have gone JC/Enchanting with my main mostly for the convenience factor of gemming/enchanting my own gear. I've wanted an Alchemist for a while because I'm too cheap to usually spring for flasks.
