Tailoring gives a slightly stronger DPS benefit than other professions with its cloak enchant. Beyond that, Alchemy, Blacksmithing, Enchanting, Inscription, Jewelcrafting, and Leatherworking all provide a roughly equal gain of 46 spellpower. Engineering and Skinning are weakest, both giving less benefit than 46 spellpower. Mining and Herbalism provide no DPS gain

Downside to this analysis is, Engineering is by FAR the most enjoyable profession to have, provides a good deal convenience outside of raids (AH in Dalaran, Teleports, etc), and is pretty much the best profession for PvP (especially battlegrounds). In raids, if you have the skill to use the haste gloves at the right time (i.e. in lunar eclipses, stacked with other haste bonuses - PowerInfusion/Potion/Heroism), it's not *miles* behind the 46 spell power profs in all honesty.

Enchanting is the by far most useful profession to have at 80. Disenchanting heroic drops is awesome. Having to vendor stuff because no enchanter is in the group just sucks.
Enchanting your own gear is also very convenient.
Inscription on the other hand is kind of useless imho. Leveling it is annoying. It will give you lots of gold at the lower level with minor glyphs so it is nice to start with but at 80 I just don't see the point.
Engineering on the other hand is tons of fun. It's not in any way more effective then other professions but all the great gimmicks you get ...
I'd run with enchanting and engineering.

Perhaps i was too brief.
Lightweave Embroidery is > 46 Spell Power
Alchemy
Blacksmithing
Enchanting
Inscription
Jewelcrafting
Leatherworking
are all 46 Spell Power (+/- 1 SP)
Hyperspeed Accelerators are ~68 Haste over time which is < 46 Spell Power.
Skinning is 40 Crit rating which is < 46 Spell Power.
The only point for discussion is really a debate between how the proc based effect of Lightweave Embroidery and the Use effect of Hyperspeed Accelerators work with the moonkin rotation. Bottom line with Engineering is no single enchant it gives makes it superior for raid DPS than the other professions, but all together it can provide an attractive suite of options for your character.

If you're soft-capped on haste, then the tailoring enchant is worth approx. 55 spellpower.

To the OP, dont forget all the other little trinkets and nifty gizmos that engi has to offer. the nitro boosts on legs are a wonderful way of escaping things, there are also bombs up on bombs upon bombs that you can use in raids and such. lets not forget the everwonderful

and an AH in dalaran is excellent, especially if youre on a server where the auctioneers in just about every major city are continually ganked. >.> yayy

For moonkin the choices for professions are:
Tailoring ~73 SP gain on avg last I read, but if 55 SP is the case it is still top.
Alchy - 47 SP gain
JC - 47 SP gain
Chanting - 46 SP gain
BS - 46 SP gain
LW - 46 SP gain
Insc - 46 SP gain
Eng - see below
23 haste lost, 27 SP gain (cloak)
28 SP lost, 340 haste for use on the lunar portion of your rotation (have not quantified this out as of yet)
loss of 12hit/12crit or 15stam/10% runspeed, 24 crit
Skinning - 40 crit rating
So in theory best choices are Tailoring/JC or Tailoring/Alch.

If, however, you can time your cooldowns and/or happen to be in heroism/bloodlust during a Lightweave proc it can be worth even more than that.
Considering you can't control it, such situations are balanced out by others where it procs during movement or general downtime.
