Personally I find inscription to be plenty of fun. The quirky stuff from it include scrolls of recall (think 20 min CD hearth) and then free buff scrolls for use while lvling or grouping (int, is the only one we actualyl have a buff of our own to compensate for, but it is still nice.)
Glyphs are constantly being changed, but unlike gear, people dont HAVE to have BiS in order to do well, and so most of all the glyphs get used.
herbalism I thought was ok while lvling. Of the gathering professions I personally belive it had the
best bonus
for priests...Another hot you are saying? what is so great about that?, well besides the fact that
every patch they buff it
and also that it is OFF GCD and NO MANA...a poor mans desparate prayer if you will that will not drop you out of shadowform....sounds better than crit chance or stamina to me....ok leatherworking is technically better....but stilll.....

Well I have Alchemy+Herb on my leveling priest, and it has been absolutely amazing. Running low on mana mid-fight (a major problem for leveling priests)? Pop a mana pot. Health? Don't waste time on a heal! Pop Lifeblood! That spell has saved my butt so many times in PvP and PvE. I can't believe I didn't pick it up on all my other toons.
As for endgame, Alchemy really has a lot to offer; including reusable health and mana potions, a reusable buff flask, the ability to create flasks which sell for 50g a pop on my server, transmutations (including the always handy epic-gem transmute), etc. Herbalism is without-a-doubt the easiest gathering profession I have ever leveled; at only level 40, I have made well over 500g selling unused herbs. Plus, like I said before: LIFEBLOOD! There will be times at endgame when everyone is taking AoE damage (in your raid) (phase 3 of The Black Knight?). Throwing Lifeblood on yourself (no mana, no cast, no gcd) can buy you enough time to get enough heals off to save enough people to down the boss. It could literally be the difference between success and failure. It is nothing less then amazing.
That being said: other professions. Tailoring is good, my main (mage) is a tailor. You get access to some awesome crafted gear to start your career at 80, though most wont stay on you very long. The bags are very nice; I am the envy of my guild, having maxed out my storage capacity at 3 22 slotters and 1 32 slot enchanting bag. The back and leg enchants are awesome, but not deal-breaking. Enchanting: unbelievably difficult and expensive to level up, but the rewards are nice at endgame. You get the ability to enchant your own rings. Disenchanting is a great way to make money; running old BC dungeons for an hour or so, I can make about 200g off of just the enchanting mats. If this is your main, however, don't do Enchanting.
Those are your best choices...as well as possibly Inscription. But you already know the benefits of that. Blacksmithing is more for armor wearers, though you do get the ability to add a socket to your belt and...bracers is it? I can't remember. Letherworking is again, ok, but the only advantage to a non-leather wearer is the bracer and...leg enhancements I think. Engineering is expensive to level up, but you get a lot of cool things at endgame, like the helicopter, the bike, Northrend Wormhole Generator, etc. Jewelcrafting...the only real advantage there is in the stats and the money. Epic gems are expensive right now, so thats a plus for them, but most of what they make can just be purchased (the Jewelers Gems do offer a bit of extra +SP and such).

I have Herb and Alch and i can say that the infinite mana pot's, extended Flask
time AND effect!
are just so so so helpful. The epic gem transmute has saved me some time and money too, while selling the flasks (35g each) nets me a hefty profit

For fun profs, engineering beats everything, but taking it without taking mining is a challenge to your sanity and to your wallet. Either have a miner alt to be able to pick something that you find more interesting - Tailoring being a nice option; Winter hats, Carpets, dresses, and so on, on a no-gathering requirement - or just take both.
If you are stuck to non gathering requirements, with the possibility of using Herbalism on your alt, between Enchanting, Tailoring, Alchemy and Inscription, I'd say Tailoring and Enchanting are the funniest (Alchemy might be arguably funnier than enchant, but what's the point if you've already got one?)

Hey now, for engineering you mention the parachute cloak, but you didn't mention
rocket boots
! I absolutely love having this on my shaman. I imagine it would be equally fun on a priest! In fact, I wonder if rocket boots would stack with
Body and Soul
... Hmm...
The OTHER thing that Engineers get that other players don't is
Wormholes
! What's that? You're busy fartin' around the Auction house and your party wants you in that Halls of Lightning run NOW? *Bwwahhhh**... You're there! shame it has a 4 hr cooldown! This is absolutely fantastic for farming herbs or mining because you can skip to the other side of the continent in seconds! And Don't forget to fly and put one up in mid air to confuse other players. ;-)
Don't forget about
Mana Pot Injectors
either! Not just for compacting stacks of mana pots into stacks of 20 anymore. These puppies ALSO increase the effectiveness of the mana return when used! Bigger bang for the buck is ALWAYS welcome!
My vote: Engineering for the most fun profession in WoW!
