Being someone who has missed out on the old days of raiding and the level 70 -5 man Heroics, it is a shame these places are now being laid to dust away and therefore I'm not sure if my dream of visiting these places is gone now? =(
By the way, can raids really be soloed and therefore which ones?

Yeah. Someone soloing it wont make it past Twin emperors
Vek'lor
and
Vek'nilash
since they need to be separated the whole fight or else they heal each other constantly.
Ive also seen videos of warlocks and feral druids soloing old world raids.

I've done all of the level 60 5-mans with no issues on the mage. Taking on bosses in the raids gets a little tricky as you can't CC them, or at least the ones I've tried. Probably would be easier, at least in MC if I wore FR gear as that's most of the damage I seemed to take. Haven't done any of the BC dungeons/raids yet on my mage.

Try hitting your realm forums and/or asking around in trade chat. Odds are usually pretty decent that you'll find someone who either needs the reputation, some old recipes or just a piece of loot for a nostalgia set.
On my realm we've run a nostalgia raid for several months, where we clear MC, AQ40 (and as of recently, SWP) on friday nights. Usually the realm fills up in no time (we're talking minutes, even seconds), since a full raid can usually zerg through Molten Core in about 15-20 minutes and then clear AQ40 in about 45 minutes or so (I never really keep track of time though). And even if you don't manage to get a full raid, you can usually clear the whole place in no time.
The same thing goes for the level 70 heroics. If you can get a core group together, who all need the reputation (for the Exalted, or just for achievement points), it usually takes no time at all.

Well since blizzard is gonna make frost mages' water elemental permanent they might add some sort of heal for the pet like they did with unholy death knights
Ghoul Frenzy
. Possibly allowing for the water elemental to tank while the mage pew pews from the sideline.
For now if your a draenei mage you can have your pet tank while you heal it with
Gift of the Naaru
. Its not much, buts its something.

Solo old content is fun. It doesnt have to be a prot pally, dk you can do it on a warrior too (without some cheesy bloodthirst specc).
Ive done most tbc heroics as prot in block value gear (arms in dps gear for some fights), the ones i cant do (yet) is MGT (2nd and 4th boss), 2nd boss in mana tombs, and shadow labs (stuck at murmur, he is nasty).
